Mark, your wife is Thai & you also live in Siam. One of the characteristics of the Thai Cuisine is its strong sour taste, which is largely absent in Surabaya's cuisine. I'm glad you can still enjoy the dishes, though they can't be your faves, as your head doesn't tilt to the right hahaha

Mark Wiens is a really nice guy, always friendly, always praising the food he eats in front of the camera. So at first glance, you might not differentiate what he really likes and what not. However, if you pay attention to his facial and emotional expressions when taking the first bite, you can see what he really likes and what not. I think Mark does this on purpose to give us the hint what restaurant is really good though he will always be polite on every restaurant and dish he tastes. That's helps me where to go and that's why I love his videos.

Yet most of them find the heavenly durian repulsive and obnoxious! I bet Mark will find the dish of water with calamansi refreshing - the dish that local used it to wash their fingers before eating or to rinse their hands off the food odour (if you don't tell him, that is. But Mark is as always as seasoned and streetwise as he can be wherever he goes.)

@1:50 bakso pentung. Pentung=club (weapon). Bakao=meatball. Very apt. Kikil is beef tendon, but when you go to a specialized kikil restaurant, they'll have all beef foot parts. Babat is beef tripe, all types. A good babat should not be chewy, as a start. The spice mix and slow cooking to remove the strong flavour as well as infusing flavour takes it to greatness.

I'm Indonesian and I don't add tomato ketchup or chili sauce to my bakso bowl, it will be too thick. Just add sambal and slightly add kecap manis (sweet soy sauce). If there is lime or vinegar, I will also add it, depends on the style of warung bakso.

Mark really has a magical mouth and stomach. Every food he tastes seem so delicious - even the ordinary fried garlic! Simply fantastic - yet he remains so slim.
And these Meatball is totally different than italian & swedish meatballs, you’ll know when you tried it.. it might be less healthier since it is added with tapioca flour and the meat ratio is lesser than other meatballs but it’s what make it great, the texture is like biting a juicy grape with crunchy and chewy texture and the flavor is intense, can only be described as godly.

I've met Filipino, Vietnamese, Hmong, Cambodian, Laotian and Burmese so far but not an Indonesian person. Hopefully soon I will meet one because I love learning about different Asian ethnicities.
