    Mas Budi Tarjo, the Indonesian guide, has definitely done an amazing job of curation here. But also, a little thing that I notice here as an Indonesian is how confident and clear Angelina is in explaining the process behind the fried eel - not to mention how comfortable she looks giving a man a ride on her bike. She's one of many Indonesian women that I see in my everyday life, too: young, intelligent, expressive and courageous, the heroes and backbone of Indonesian culinary traditions, and it's awesome to see them finding their voices on social media and in public life in general.

    Mark, your wife is Thai & you also live in Siam. One of the characteristics of the Thai Cuisine is its strong sour taste, which is largely absent in Surabaya's cuisine. I'm glad you can still enjoy the dishes, though they can't be your faves, as your head doesn't tilt to the right hahaha

      the amount of spices needed for that kind of dishes is the main factor 😆, for example the invasive asian carp that plague american waters is good when cookeed with the right ingredients.

    Mark Wiens is a really nice guy, always friendly, always praising the food he eats in front of the camera. So at first glance, you might not differentiate what he really likes and what not. However, if you pay attention to his facial and emotional expressions when taking the first bite, you can see what he really likes and what not. I think Mark does this on purpose to give us the hint what restaurant is really good though he will always be polite on every restaurant and dish he tastes. That's helps me where to go and that's why I love his videos.

      So wait till you see the other food channel by an orang puteh Sonny - raw liver, bile, uncooked blood, porcupine and what not. All local. Yet most of them find the heavenly durian repulsive and obnoxious! I bet Mark will find the dish of water with calamansi refreshing - the dish that local used it to wash their fingers before eating or to rinse their hands off the food odour (if you don't tell him, that is. But Mark is as always as seasoned and streetwise as he can be wherever he goes.)

    @1:50 bakso pentung. Pentung=club (weapon). Bakao=meatball. Very apt.
    Kikil is beef tendon, but when you go to a specialized kikil restaurant, they'll have all beef foot parts.
    Babat is beef tripe, all types. A good babat should not be chewy, as a start. The spice mix and slow cooking to remove the strong flavour as well as infusing flavour takes it to greatness.

    I'm Indonesian and I don't add tomato ketchup or chili sauce to my bakso bowl, it will be too thick. Just add sambal and slightly add kecap manis (sweet soy sauce). If there is lime or vinegar, I will also add it, depends on the style of warung bakso.

    Glad that your hosts didn’t bring you to another place that sells yet another version of beansprout salad with peanut sauce 😂 I gotta say I don’t like it when they create a bigger version of a normal-sized food item just for the novelty of it, but I’m onboard with bakso iga because it combines two of my favorite things: meatballs and ribs.       And these Meatball is totally different than italian & swedish meatballs, you’ll know when you tried it.. it might be less healthier since it is added with tapioca flour and the meat ratio is lesser than other meatballs but it’s what make it great, the texture is like biting a juicy grape with crunchy and chewy texture and the flavor is intense, can only be described as godly.

    This is easily one of my favorite series. I've never met an Indonesian person here in America though I know they're here hopefully I get the chance to meet one and try their cuisine someday.

      Really, is a lot of Indonesian lives in USA, and we have restaurants in New York , California, Atlanta

      @@yuliadwi4691 yeah it's weird how I never met one before because I know there are a lot here in the US. I've met Filipino, Vietnamese, Hmong, Cambodian, Laotian and Burmese so far but not an Indonesian person. Hopefully soon I will meet one because I love learning about different Asian ethnicities.

    Mark, please visit Semarang to try the legendary spicy mangut belut (seasoned smoked eels) of Hajah Nasimah Sampangan. You can eat the famous mangut kepala manyung pedas (spicy seasoned smoked ariid catfish head) in the same warung too 😋
