    A couple tips from a fellow Baker: A second rising before boiling will help with the fluffiness and the dampness is from not having your loaves spaced far enough apart when baking.

      A bit of baking soda in the water would help make the crust a bit crispier (like a pretzel) as well.

      Agree. I’ve made bagels and the way I do it is let the ball of dough rise, then shape into bagels and do another rise. After the 2nd rise, boil, take out with tongs and immediately dip in whatever (e.g., sesame poppy garlic onion salt or all of them!), then bake. This makes much more sense then boiling after only one rise since the boiling probably kills off some of the yeast and limits the rise and flavor.

      That makes sense. I was wondering if it had something to do with her adding the salt right on top of the yeast instead of after the flour but I'm guessing since she mixed it all right up then instead of proofing the yeast, it doesn't really matter?

      @@Minyassa I mean, you should always try to separate salt from yeast, but in small loaves like these it's not that big of a deal. I would still drop it in on the opposite side of the bowl before mixing the dry ingredients together.

      Exactly my thought. At the place I work we boil jumbo pretzels every day, I suppose I'm so used to it boiling dough didn't seem like a weird concept until I saw it framed like this

    In Austria, the yeast dough is filled with plum jam and formed into balls. We lwt it sit to rise and then don't boil it but steam it. It gets deliciously soft and fluffy, and is served with either vanilla custard or butter, powdered sugar and poppy seeds.

    Maybe you might end up with a fluffier bread if you let it proof a little longer after you formed the logs? I've never boiled any dough apart from a pretzel recipe I did a while back

      perhaps let it proof a second time in the bowl and then after you form the loaves let it proof a 3rd time to get the maximum amount of fluffiness

      @@anonimai It probably won't be an issue here since its a fast bread to make using active dry yeast, but for things like sourdough where you are already spend many hours throughout the day and sometimes letting it proof overnight, you sometimes overproof the dough. The time I did it (with sourdough) I got massive air pockets that all rose to the top of the bread and they left a very thin wall which burnt when I tried to give the bread some colour, also the portion of the dough that wasn't big air pockets was essentially dense as that part didn't rise

      I've never had a yeast dough recipe with no proofing after forming when the dough gets worked hard to get c it in form. Boiling basically kills the yeast so there's no secondary rise. I think a short 15-20 minute proof after forming would have helped, yes.

    Denseness is definitely a feature of boiled breads! Part of why we boil pretzels and bagels is to help them maintain their shape rather than expanding outward, which is why they end up dense and chewy. For loaves, one usually wants more rise and an open, soft crumb. The wrinkles on top might be a sign that boiling so long caused the dough to overprove-2 minutes seemed like a really long time to me.

    They make a boiled "dumpling" in Czechia that's very similar to the first part, called Koprová Omáčka. Basically a bread log that gets sliced up and served with a dill cream sauce.

      Koprova omacka is actually the dill sauce typically served with the boiled dumpling - houskovy knedlik in Czech. Kinda slimy at first glance but delicious 😋

      Made me think of kluski śląskie which is a dumpling that is dimpled and made of a potato and flour mixture, boiled and then fried and served with a similar sauce sometimes.

    This reminds me of something we have in my region of France which is called "Mauricette", it's prepared the same way as pretzels (boiled and baked), and it has the same shape as the bread you made but is way darker in colour. My favourite!
    Also, the dampness you're talking about might come from the humidity in your room/oven. When it rains, the Mauricettes tend to be more damp, chewy and elastic. In my family, we call them "Mauricettes de pluie" (rain Mauricettes)

    I wonder if you boiled them for about 30 seconds to "set" the outside and then let them rise a bit more before baking how it would go.
    Heavily seasoning the water with garlic would also be interesting to try

      @@riverAmazonNZ so I looked it up and it seems the only reason I can find is that oil can interfere with gluten development so adding it after helps to avoid that, but I’m not 100% sure that’s the actual reason people do it

    Bagel bread! I used to make something like this back when I owned a bakery. To get the bottom to not feel wet use a baking screen instead of a sheet. You can also add rehydrated dried onions for Onion bagel bread. You could instead add some fresh chopped red and yellow peppers, grated carrots, and some of the rehydrated dried onions to make a veggie bagel bread.

    Thanks Emmy. Looks yummy to me! Scrumptious. That was my late Aunt's fave word lol. She managed a Bishops for years. Just lost my sweet Mom on Easter Sunday. She was in a care home hospice for cancer. They didn't get us in there in time. We hadn't been allowed near her in over a year. My heart goes out to all in this horrible Covid mess. So many face the same pain. If you have a way get to your loved ones b4 it's too late! Don't let them tell you there isn't a way. There is. They just have to put it in practice. I saved so many things to show my Mom. It wasn't Covid that made her sick...but I believe it definitely contributed to her passing. Now my sisinlaw and her very I'll grandson have Covid. Got it in a HOSPITAL. And my bro has to quarantine but doesn't know if he caught it from her yet. At least 10days and he isn't prepared. We have no car and I am very high risk so we will have to get to testing somehow too. Aside from Uber and such the only person we have who could really help is my oldest grandson.     Made these yesterday. I made a half quantity of the dough, and made 6 smaller ones. The firmer texture inside and the chewy crust reminded me of bagels.
    Next time I'm thinking of rolling out the dough in one piece and using a cookie cutter to make flat round rolls for burgers. The slightly sticky surface after boiling hopefully will allow sesame seeds to stick to it before baking.

    Bagels tend to be more dense/ chewy so perhaps that's an intentional side effect... think bagels have baking soda in the water too though when they are boiled and it's for a much shorter period of time

    Boil pretzels with baking soda before you bake them. It gives them that carnival crust we all know it for. I also found it makes the pretzels fluffier compared to the ones that just went into the oven after resting.

    When I bake I always let the bread cooling down down on a grid so air can flow underneath. That gives the water a way to evaporate. It is true however that I have never boiled bread before. Interesting concept for sure!

    Some thoughts: what if you let the dough do a second rise before putting it in the water, and maybe bake them on a wire rack so they're elevated and get kind of crispy all the way around?

    If you raise the PH of the water by putting baking soda in it 1/8th cup or so, it will create a gel on the outside of the bread and give you a soft pretzel like crust.

    Considering bagels and pretzels are boiled first before baking this makes sense. Watched an episode of Good Eats once and learned you add backing soda or lye(don't use unless you know what you are doing first) in the water to boil your dough in before baking.

      I keep a log of our groups dnd Adventures in Google docs. It's dated and has at least a little bit written for every meeting we've had. It has proved to be beyond useful.

    I have that same danish dough whisk! It’s easily my favorite kitchen implement. You think it’s not going to make a huge difference but it’s so much easier to mix dough with it.

    When I make bead I just used water, flour, salt and yeast. The only time I add anything for flavor is if I'm adding basil (basil bread is off the chart) or orange zest (omg orange zest bead mmmm). Sometimes I add a little brown sugar to the orange zest bead around the holidays.

    Opposed to boiling, bagels are often steamed instead. I’ve never attempted to steam bread by pressure cooking it, but I bet this is worth a try. Done in a combo unit like a Ninja Foodi would accomplish the steaming and baking in the same device. Pressure cooking cornbread results in a mushrooming up from the center like a muffin instead of the typical flat across the top. So pressure cooking bread would be interesting. But I would be concerned that under high pressure it might just grow out of the pan and into the entire pressure vessel.

    It's supposed to be dense, it's not supposed to be fluffy! The WHOLE POINT of boiling a dough (like making bagels) is to partially cook the exterior to form a layer that constricts the rise and makes the interior dense and chewy.

    A little hint. Add a small amount of Malt to the dough and the water that you boil the dough in. It will improve the linear Bagel loaf.
