Mr. Blobo but one a more serious note I'd say the answer is ... magic. Would it be so farfetched to think that Hawk his mom is simply a pig with the magic abillity to increase in size? Or she is just a giant pig that adopted Hawk. Giants exist so why not giant livestock?

Merlin is actually a normal human, but in the manga in turns out that she was making a deal with the goddess of goddess clan and demon king of the demon clan, she tricked them both to give her blessing and a special magic ability called "infinity" the place she was from got destroyed by the fury of the gods after she tricked them thats why she is "that survivor"

Some more info on Merlin if ya want it.
So in one episode of the show (can’t remember which one), she states how, “no member of the Seven Deadly Sins were the same race.” They then all agree with the statement. She starts to list of what race everyone is and, like in the video, calls Ban, “formally human.” Then when she was up after Ban, she says, “and I guess you can consider me the same.” So she’s also “formally human.” But what makes her this way? That but is never explained.
The next bit is about her homeland. To cut it short, she has the magical ability of Infinity. If she can cast a spell once, she’s able to use it with ease however many times she wants. Both the Demon King and Supreme Deity were fascinated by her power, and wanted her by their side. So, they tried to bribe her. They both told Merlin the crazy tactics and magical powers they used to fight, and taught Merlin how to use them, hoping to win her over. After that, she never decided to go with either of them. Furious, the Demon King and Supreme Deity spent a month destroying every last bit of Merlin’s homeland and her people, hoping to kill her with it. It never says where she was, but she survived unhurt.
Hope that gives some people some more knowledge on her. I know I didn’t have all the specifics, which I might come and add to the comment later... but ye.

Actually no the story goes that Merlin was born in a city of mages and that City is called belialium the reason she even got offered the deal for special magic is because she was a special child born with the ability infinity and when she tricked both offeres (the demon king and the supreme deity) they got angry and destroyed belialium

Actually in some cases Mage is a race because if you are born a Mage, you can use different kinds of magic and spells. If you are born a human, You can’t use any magic unless you are a holy knight or have a special ability at birth.
Ummm correct me if I am wrong but Gowther said none of them were of the same race. So you saying that more than one character is human doesn't make sense, even if you classify ban as "formerly human" that would still make him human.
Merlin is a goddess. She is Elizabeth's little sister (when Elizabeth gets her memories back).

Pretty sure I read Merlin was a mage from a city whom she destroyed as they were trying to control her due to her ability (infinity-endless magic) 3000 years ago just before the holy war and both the demon clan and goddess clan tried to recruit her for the war as she was so powerful and she ended up tricking them in to giving her powers from each race before not helping either side.

I've personally never read the manga, but have watched the first season and some of the second season of the anime. I always theorized that Gother was a member of the goddess race. XD It just made sense to me with how he acted. Honestly, this is more interesting. XD Anyway, my favorite member of the Seven Deadly Sins is most certainly Merlin. :3 I love her attitude. X3 Plus mages are kind of my favorite thing in all of fantasy. Tied with vampires, of course. XD Thank you for this information, this is interesting. :3

Merlin is a half human, half demon. I myself is a big fan of Nanatsu no Taizai... If you read the manga carefully you'd see that Merlin has a Father who was a demon, she speaks demon language and knows demons dark magic spells. BUT, she said she had a short lifespan just like humans and so she didn't want to die. (assumption she had a human mother). With her ability to make her magic spells last infinitly she just stopped the time growth of her body so it doesn't age....that's why she doesn't physically change. Proof is that the actual Elizabeth (the goddess) said in the recent chapters that she saw Merlin as a teenager. Which means she was still growing before. Demons don't physically grow old. So she wasn't completely a demon! But a half demon, half human.
She is not necesseraly half human. But she's definetly half demon.... maybe half druid or some race that doesn't have a long lifespan.

The two clans held a grudge against her which is why Belialin was (probably why) razed to the ground. Merlin was the only survivor due to her quick thinking and magical abilities. Her father was the only man to enter Purgatory and return alive, which is why his name is known around the world.

Let me explain merlin. In the movie she said she is somawhat a human. She is confusing because during the great war or something, both the demon and godess clan wanted her on their side and they offered her power. She took both their powers and when they found out i believe they destroyed her hometown and she kept those powers. It also explains why her sin is Gluttony.
