Hi! French here. I love seeing such enthusiasm about our delightful cuisine ❤️
At first I was suspicious because very often I see "French food" on RUclips that does not look like French food. And the I saw you were in France and as soon as I saw the Beurre Bordier I was sure you were on the good path of French cuisine.
I live very close to the Bordier factory and try to buy some as soon as I can, but where I live, in Brittany (Bretagne), we have so many good choices of butter, so I often buy different brands. But Bordier is by far my favorite.
Your take on the Croque Madame is interesting, I would have made it with thinner bread slices, but this looked delicious, although fancier that what French people would cook haha
Your Bœuf Bourguignon looks perfect. Eating with the bread is the way to do it. This is something I really miss when traveling abroad : eating the bread with the delicious sauce 🤤
And I love when you say "No matter how full you are, you have to have a desert". This is so true. Actually, when I'm meeting non French speakers, I try to teach them a French word I hardly found in another language : the "gourmandise" or to be "gourmand". It's the fact to eat something that looks delicious (usually a desert but it can be anything or just having more of the food you just had) even if you're full. Technically, you can stop right there. Your stomach say "no more please". But your brain and your mouth is like "But it's so good, just a little more".
My region is also the birthplace of the French crêpes, and yours look perfect also. But in Brittany we would put maybe more (salted) butter as we are crazy for salted butter.
If you come back to France, I urge you to go to a different city than Paris. Paris is great, but it's very different from the rest of France. Like every country, each region of France has it's own cuisine.
From Brittany, you tried Crêpes (and the crêpes and galettes in Brittany are 10 times better than in the rest of France) but you should definitely try the Kouign Amann, which means Cake of Butter in the traditional language of Brittany.
There's also so many different kind of stews you can cook (Coq au vin, Blanquette de Veau, Carbonnade Flammande, Cassoulet, Gardiane de Taureau, Civet, bouillabaisse).
Anyway, this is definitely my longest comment ever but I really loved your video and I had to tell you! Merci ☺️

Boiling the bacon also gets the bacon-ness out of it so the dish doesn’t just taste like bacon. Makes a big difference for quiche. Agree about the beef bourguignon being better the next day, to the point that after my last one I thought I should really just consider a day in the fridge to be part of the standard cooking instructions and not even start to eat it until the next day.

French guy here! Love your videos and it's really cool to see you doing some French cuisine, and even cooler to see you nail it! Your Croque Madame looks so good! Had never heard of the sour cream + cheese paste situation but I'll definitely try it. And my god, the pain de mie you made looks stunning!
One thing about the Boeuf Bourguignon though (which looks very good don't get me wrong): you're supposed to marinate the meat in red wine first! (which makes the recipe even longer haha) with some garlic, onions, carrots and aromatics. And it's this marinade that you'll add to the pot after you've browned your meat instead of adding straight up wine. If you make this dish again, try it and it'll make it even better!
Greetings from Paris and looking forward to seeing your next videos :)

For a more traditional and fancy Croque-monsieur you can use 2 slices of bread instead of Pain de mie and put béchamel and ham inside.
Pro tips: you can add Comté and nutmeg in the Béchamel (we call it "Sauce Mornay"), this is the fanciest Croque-Monsieur you can have in a traditional Bistrot.

Can I just recommend one tip from my French teachers in high school? The way you said "un" in the video is actually how you'd say it in Spanish. The u in French is pronounced identically to the u in 芋 like taro in mandarin. It's also more nasal, so bring your Cantonese out. 😂 "un" is essentially pronounced like how you might say yes in Cantonese "嗯". It's the reason why I chose to learn French in high school. Some of the sounds are quite transferable from Mandarin & Cantonese. Not really English though. 😅

I love the interest you take in French food ! As a French may I add :
    - having the crepe batter thinner (add milk), it’s going to be able to spread and be thinner (it shouldn’t look like pancake batter, more like thick milk consistency)
    - having the boeuf bourguignon with potato puree for the ultimate indulgence !

for breakfast maybe try some "pain perdu"
also something I know my parents and I both enjoy is just some toasted pain de mie, then add some butter on it and then you add some coco powder on it
believe me it's delicious and french approved
for dessert, I think you can either try "une tarte tatin" or "une charlotte aux fraises"
for lunch and dinner...I'm not sure
    maybe "un gratin dauphinois"
"une crique ardéchoise et une bavette à l'échalotte"
    "une blanquette de veau"
there are options that don't come to my mind now but...I believe in you
