My aunt does something similar to this. I tried it last year. Was great. Just wish the turkey doesnt sit in the pan drippings whilst cooking. They dont make pans with a rack tall enough for that though

Once the turkey has cooked for the first hour at 400 degrees, do you keep the oven door closed and bring it down to 200 degrees - or try to bring the temperature down in the oven?

it's actually the pan drippings that make it so moist! You want it to sit in them or you won't get the same results

It will depend on what size turkey you get but it will produce a lot of broth

Good Morning! At that low of a temp, it shouldn't be dangerous but I never suggest doing something you're not comfortable with.

What size is your turkey? I’m going to cook at 20lbs turkey I’m thinking 13 hours?

Not so sure about the herb mill. A knife might work better?
you can certainly use a knife but I find the herb mill to be so much faster
