Unless you're the target of a hit in prison, bad guys pretty much always threaten you with a weapon, not attack you with it. If someone wants you dead, you're dead. They'll sneak up behind you and slice your throat or shoot you in the back of the head. Or snipe you from a block away. There are techniques for it, but active hand-to-hand with a knife you'll likely never use unless you're a Navy seal or in prison. Still, by the looks of this guy, he knows damn well how to address an active attack, too.
All the knife disarms in these videos are fake. A real attacker won't release the knife that easily. If you freeze frame you can sometimes catch the partner releasing the grip prematurely. It's faked. And yet they have this huge audience of people who don't understand what they are seeing.
