    in Morocco it's called taktouka, the eggs are usually left out and it's served as a warm salad along with a tajine and bread

    This is a perfect recipe for this time of year here in the US midwest. My tomatoes and peppers are just finishing up, and my ducks are still laying almost daily. Can't wait to do this!

    Btw Hugh ! It was you who inspired me to make my own prosciutto! I made them and for a first timer and living in Los Angeles weather how i pulled it off was a miracle, all i can say about the whole affair was that it was torture waiting 11 months to slice into my prosciutto, the episode i was inspired was way back when you barely moved into your farm and there was another gentleman who helped you butcher your hams ( prep) them you were working outside and you made some salami and hung them up outside.

    In turkey we say "menemen" but instead of red pepper we just use green pepper. Mostly we eat menemen in breakfast of course with georgius turkish tea;)

    I made this for our evening meal tonight, it was amazing! Being in Canada at this time of year, I couldn't find a poblano pepper so I used orange, yellow & red bell peppers and a finely diced Thai birds eye chili (I keep mine in the freezer). It was great, fantastically smoky with a bit of heat and very filling even though it's a vegetarian meal. Oh, and I used regular chicken eggs too. Some nice Calabrese bread mopped it all up!

    We make it in Malta too! But we add basil and mint leaves, olives and serve it as a side to grilled fish. I also like to place it on local bread called ftira, top it with cheese and oven bake the whole thing...

    Finally found some local duck eggs (not an easy task in northern New Jersey). Not so easy to find Romero's or Poblano's this time of year either; but the task is accomplished. This Sunday is the day of reckoning! I made this about a month ago with bell peppers and chicken eggs, and it was very nice; but somehow I felt we were missing something special. This time, we'll do it right!!!!!

    Use part of the shell to retrieve a broken piece of shell. Has natural affinity and easy to retrieve.

    simple recomandation leave in the oven for 5 min at 350 before adding the eggs youl ll see the difference

      mkvali Moroccan Jews brought to what it's called Israel not to the whole Middle East. It's a simple dish eaten all over the Middle East despite it's also known in Morocco and other North African countries.

    A couple of tips, Hugh...cut a little cross in the tomato bottoms before scalding them helps with peeling. And to recover an errant egg shell from the dish, use the large shell as a 'scoop'. A very nice dish & vid nonetheless.

    It's a traditional Tunisian dish (originated in Tunisia)...we even have people with last name Shakshouk/Chakchouk

    The shakshokah is Arabic meal made from the eggs
    We make it like this
    Star Coke the onions slice with the tomatoes tell to the onion turn brown after that add the eggs and mix the eggs with the tomatoes until being ready
    Enjoying it ^_^

    Anybody know where you can buy Poblano peppers? I have never seen them in the UK.

      RedBear535 Just needs a bit of heat, you can substitute with a mild pepper such as habanero. Tweak and adjust.

      Any latin american grocery stores near you? Otherwise you can sub other peppers as well. If you really want the poblano flavour then you can also get dried ones and rehydrate them.

    I just made it but after 10 minutes of baking eggs got hard like rocks, I love nice runny yolks so it was ruined, did I do something wrong?
    I used jumbo size chicken eggs

    I noticed the use of what looks like a cast iron pan. Some regard the acidity of tomatoes absorbs iron and affects the flavor.

    The easy way to get rid of egg shell is to use egg shell. The bit that is in the dish will stick to a piece of egg shell dipped in next to it. i have made a similar dish but with fried eggs on top and always assumed it was Mexican!

    This is a Scottish dish. We invented it after discovering cumin plants growing near the main haggis hunting grounds. We normally add a dash of Irn Bru to give it a certain oomph!

      Tozmo M is correct. The Scots invented this dish as well as that other classic - chicken chow mien. Only to be enjoyed after two rails of skag off a hoor's bahookie.

    I thought this was an Israeli dish? It is serve in Israel with pita bread. Obviously it is not usually made with duck eggs. Your version looks great!

      It is very common in Israel, where it was brought by jewish immigrants from morroco and tunnisia. Usually we make it spicier though

      There are different variations. Israel's style includes pita and sometimes meat. We also like it pretty spicy, although the best version is the Moroccan. (In my humble opinion)

      Well, it has different variations. I live in Israel, so we have different backgrounds cooking. So sometimes it's Moroccan, sometimes Tunisian, sometimes Egyptian, and at home I like to do the Israeli style, with some meat, and no peppers.

    Not Just med dish.
    It's originated from tunisia northafrica and sometimes we add MERGUEZ to it which is a spiced lamb and beef sausages 😊
