I met Hugh in 2013, they say never meet your heroes, but he was a true gent. He signed my river cottage cookbook and he had a conversation with my 2 year old son for about 5 minutes, allowed loads of photos and was not pretentious in any way. Although recently he has been disparaging to poorer people, he has stuck to his principles of fresh food is the best. And for that, he is a good guy. As a small child, my gran who had a farm, taught us to forage, from mushrooms to blackberries, and Hugh taught me to carry on foraging......👏🏻👏🏻👍🏻

Fantastic programs these are! Everyone should try and do a little bit of the Good Life if they can, even a few Mackerel caught off the beach on feathers and cooked up tastes yummy, and it's easy and satisfying.
In the United States, smoked mullet is a staple, specially in the South. We leave skin and scales on, butterfly them open, remove head and guts and smoke for hours over oak. the meat falls right off the skin and bones. Great eaten alone, also makes a fantastic dip with some meat and sour cream, onion, spices.
When a fish is caught to eat kill it immediately, gut it, put in a wet cotton bag, hang the bag in the shadow, and in a breeze. Less suffering and fresher fish.
If you have an immersion/stick blender it's very easy! It takes less than a minute! One egg, one cup of vegetable oil, tsp of salt, juice of half a lime, and a tsp of mustard. Blend and it forms in seconds. Once it blends up and all the oil is incorporated you can flavor with things like smoked paprika, roasted garlic and shallots, fried/dried herbs, etc.
now normal I like Hugh however watching a documentary tonight, Ingenious animals 4/4 about 3 parts of factual evidence Hugh stated about the eagles is nonsense. The Mongols have been using eagle's to hunt for thousands of years, such a fud get your facts straight Hugh !
