    Hey Kevin, just finished making your version of this dish and it turned out fantastic! I had made it once before in the BBQ with rocks, but it didn't turne out as good as this method in the oven. The only deviation I made was I marinated my pork in the sauce for about 1 hour before placing in the pot. Looking forward to making another batch this week to impress our friends.     this method is a little bit similar as traditional Mexican lamb barbacoa? very smart sir.

    Kevin, in your version of this dish you let the entire pork marinade and roast unchopped. Wouldn't it be better to chop the pork into cubes then marinade and roast so that the spice mix sauce would better permeate the meat?

      You could do that but I think i would be a bit tricky (messy) to wrap up all the chunks and marinade. Let me know how it turns out if you do.

    Although I appreciate the efford, the translation of the name of the food should be more like BBQ Pork. PIBIL makes reference to the type of cooking. Where, like in traditional BBQ, a hole is dug into the ground, then fire is started and stones are heated until all logs are burning really hot and the stones are also hot. The whole pig is pretty much prepared as your recipe is, then all the meat tenderized is placed into a container. The containere is lowered into the hole, then covered with more branches and dirt to make sure the heat is trapped ( just like BBQ). But the tenderizing is pretty close to the Yucatan's traditional recipe. Thanks for making this video. I tried this and is great.
