Could you have simply used softened butter and added the vanilla, oil and butter before the flour? Or is there a chemical reason for doing it in this order? Or was the milk just still too hot? Really am enjoying your videos! More please.
This process is called Tempering and is key in Japanese style baking where aeration and fluffiness are maxed out. This recipe combines that technique with more traditional western-style cake crumb. If you try this with cold milk, you won't get the aeration needed for this recipe to turn out as expected. Yes, the milk is still too hot, but adding some of the batter and then adding that mix to the batter in the mixer is helping to even out (temper) the temperature difference. As well as aiding aeration, this also avoids cooking the eggs with hot milk!
