The scraper that comes with the Ankarsrum has a bit on it that is perfect for getting into the grooves of the roller for when the dough is a bit sticky. Great video. I wish there were more on RUclips showing how good this machine is. Thank you!
I guess I just never liked the included scraper for that. Maybe because I am left handed and it the grooves twist in the opposite direction?! Either way, less washing up is always my goal!
I LOVE your videos and the sound of your voice with its nice accent is all I could wish for when taking a lesson in using my Ank. Please keep making these and showing us all you have discovered. Believe me, it helps because you're detailed enough without boring me. No music necessary. You're perfect! And off to the kitchen to make this.
At last you have done it! Your bread looks first class. I, like you have had problems using the Ank. In fact after a year of getting nowhere I went back to using a cheap stand mixer. However last week I bit the bullet after watching one of two videos and tried the Ank again. Like you I had complete success! I am now knocking out fabulous bread. I still cannot fathom out just where I was going so wrong.
Well done and thank you. I made bread for many years by hand and later with a stand mixer but had never heard of high hydration until my daughter bought me a bread baking book by a French baker. His technique is nothing like the way I used to knead and can no longer use my hands due to arthritis. I halved his recipe to 500grams flour, 350 water, 10 grams each salt and fresh yeast. It made it but took forever and I was worried about the motor of my Kenwood titanium and wanted to make 3 loaves at a time. I searched the net but everything was too big and ugly for an average home kitchen until the Ank. I read reviews and thought I’d found the answer. It could run all day and the capacity was more than enough. I had the same problem as you. It made lovely bread as long as I just added flour until it made a doughnut shape. I couldn’t just use a recipe and I have loads I want to try. I’ve had the stickiest dough I’ve ever seen, over kneaded to get the window pane and it’s risen so high it lifts the cover off the mixer but sticks to hands wet or oiled. I just baked 3 loaves today but not like I wanted. I’ve only just seen this and it looks perfect so next week I’ll be following your video wishing I’d seen it this morning. One very grateful Brit

I didn’t get the window pane properly and it was getting stickier so I stopped and let it rise. After rise I tried wetting my hands, then oil on them and then ended up putting flour on work surface. I’ve made higher hydration dough with good window but not the same sort of sticky, if that makes sense, in my Kenwood. I made bread with lower hydration today and got perfect window pane. I used instant yeast, put liquids in first, salt, then switched on and added flour slowly putting yeast in half way. Turned speed to medium for 8 minutes then took knife out for another 4. Better and baked fine but still a bit sticky. I don’t like instant yeast and can’t find dried yeast anymore. I usually use fresh yeast but thought I’d see if that made a difference.
@@twistybakes5681 Have a look at Mike Avery on RUclips. He has done two videos testing the Ank and seems to get it right. First video is with the dough hook and then same recipe with the roller. He weighs ingredients. I’m going to try his recipe with dough hook next. Fingers crossed

Thanks for this, I saw one of your first ankarsrum videos where you didnt seem happy with it, and it seems like you figured it out. I've been doing research and im fairly certain I will be buying an ank.

Now I tend to disagree with the "Ank takes less flour" approach. Because that means I am not baking my recipe, I am baking for the mixer. I want the same bread I do by hand or in a Kenwood, not an adjusted recipe. So this channel was always about making my usual recipes, but in the Ank!

Hi, really helpful video. Lovely looking result. I'm about to use my Ank for the first time. Out of interest, what size loaf tin did you use? And just to confirm, you don't bother to do any preshaping or anything like that? Out of the bowl, degas, roll and into the tin. Have I got that right? Thanks.

The Ank takes less flour. I love mine. I’ve made bread, cookies, cakes, icing, butter, cream cheese and whipping cream
