Spyderco Pacific Salt & Endura for fruit cutting

  • I like flat geometry for this job. Hollow geometry doesn' bite and is bounced out much. Convex geometry is bounced out too. Full flat Endura is one of the best fruit cutting knife in my opinion.

    The Full Flat Grind (FFG) definitely has its advantages over other grinds in a number of functional and, in my opinion, aesthetic roles. Spyderco has wisely capitalized on the popularity of FFG by issuing numerous, successful models in it. I would say that FFG and the famous "eye" hole on the blade are two of the icons that make Spyderco instantly recognizable.

    I recently tried a system simiral to the edgepro apex for sharpening my non convex knives. I was blown away by results achieved. I could never control the knife on a stone as precisely. I recommend it.

    Wow great demo! I would have chosen the Salt over the Endura for sure because of the H1 steel. I have a saber grind Endura. It came out the box extremely sharp and with a delicate point that I sadly ruined (rounded) using a small grinder. My favorite similar knife is a black on black Para Military 2, but I am very careful with it. Great video!

    Very interesting, thanks for sharing. I think when the grind is good for slicing, the bevel doesn't really matter that much anymore. F.e., when you have an Opinel that has a natural full high convex (almost not noticable because of the thin blade), the fact that it has a convex edge or a V-edge doesn't affect slicing that much. Because of the thin profile, even when it's dull it'll cut fine through apples or oranges. With somewhat thicker knives such as these Spydies, the difference is clear.
    I've been rethinking putting convex edges on my blades as well. Some of them, I've decided to keep a V-edge on, whereas others are better served with convex.
    Hollow grinds on the other hand can be quite good, if they're rather high. F.e. my Buck Vantage Pro is somewhat of a slicing champion. It bites in wood very deep too. Deeper in fact, than f.e. a full flat Becker BK14, because of the thinness of the edge and blade.

    Part of it is that spyderco hollow grinds go directly to full blade width behind the hollow. Supposedly a hollow that's followed by a flat grind so it doesn't make the knife push the fruit away from itself, and will just slide up the sides like a flat grind. I haven't really compared as I just turn mine into scandi which also gives the smallest possible angle.

    The crack can be formed by shrinkage and swelling of the wood stand.
    After I've used my chosera's I dry them with a towel and leave them out of the box for 24 hours somewhere where they can dry slowly.

    Perfectly understood your point regarding the flat bevel effectiveness when push-cutting through fruit.
    Sorry to see the crack in the Shapton 2k stone. Is that a wood base? If so, I wonder about the stability of the wood having gone through multiple sharpening sessions and the associated water splashing.

      The base is wood. I have never experienced cracks with my stones without a base. Shapton Pro series stones (aka Ha-no-kuromaku) don't have a base and are innovated from my M series stones. Thanks.

    Great video Mr. Wako. Very helpful to watch you restore a hollow ground edge, as most of your work is usually done on convex edges. Thank you.
    Out of curiosity, for what purposes would you say a hollow grind is more useful than a flat or hollow?

      Hollow grind has less metal to be ground off to sharpen it. So it fits field sharpening. Hollow grind slashes into meat or such soft objects more easily than the other grinds. So I think hollow grind knives were invented for military killing and field game dressing. As a proof many of SOGs and all of Randalls are in hollow grind. Thanks.

    Sir, do you ever check the edge sharpness with the back of a finger nail? Dull edge slides across the nail and sharp edge drags across the nail. Less danger of a flesh cut. Thank you.

    Well, but I don't think people usually push-cut an orange. They slice it. There may not be so much practical difference between your knives in slicing. Also, a possible advantage of a hollow ground knife blade over a flat ground blade is that, as the edge wears away from sharpening, the hollow ground blade edge stays closer to its original thickness, while the flat ground blade edge gets rapidly thicker.

    Both knives have their place. But the video shows That the Endura 4 will be superior in almost all tasks. I bought the green Endura as a result.

    I go out a lot on the sea and i use my knifes very frequently on salt water. Would the Pacific Salt be better for me or should i chose the Endura? I don't generally use the folding knife out on the sea while fishing but sometimes i forget my pliers or i have to kill the fish quickly so i reach in my pocket for it and it gets salt on.

      H1 is perfectly rust resistant even against salt water but doesn't take the keenest edge by water stone sharpening for its steel property. Anyway I would recommend you H1 because you can leave it anywhere without any care after your salt water use.

      virtuovice Thank you! I chose to get both knives. One for my fishing trips and the other for every day carry. Couldn't decide. When they arrive they are going straight to water stone sharpening!!

      Very shallow cutting, where geometry isn't much of an issue or the thinnest possible edge works best in shallow cuts. When it comes to cutting fruits, geometry is much more important than sharpness, you'll see people with extremely dull but thin flat ground knives greatly outperform people with razor sharp hollow ground knives (Kyley Harris has, for example a video where the side of a spatula is more than enough to dice a carrot). Hollow ground knives excel at slicing , rather than push-cutting, which is what Wako is doing in this video.

    What do call the white stone you use to remove the residue on your sharpening stone? Also where can i buy it? Thanx

      The small white stone is called Nagura. It complements water stone sharpening very well. It is selling at this site. Tenjo (Heavens) is the softest and matches ceramic fine grit stones the best. They add their stocks regularly and you can wait until what you need comes up there. Mejiro (White Eye) is the hardest and doesn't work for the purpose. You should not buy it. Anyway they take an English order and PayPal. And they ship promptly by air.
