- Hey guys! Long time no see! A long time ago, I released a video showing you all how to make brioche buns. These days, I tend to go with potato buns for my burger needs because they are so soft and squishy and are the perfect texture for any burger. So in this video, I'll show you guys how to make, what I think are the best, potato buns. Warning: Dough is very sticky, so using a stand mixer is highly recommended. If you want to see me do this recipe without a stand mixer, let me know and I will definitely remake this by hand. Hopefully you guys enjoy the video!

Ingredients (Makes 10 buns, or 6-8 larger buns)
400g (3 and 1/4 cup) Bread Flour
210g (3/4 cup + 1/8 cup) liquid (see notes)
16g (2 tbsp) milk powder (see notes)
40g (1/4 cup) sugar
8g (1.5 tbsp) diamond crystal kosher salt
42g (3 tbsp) butter
8g (2 and 1/4 tsp) active dry yeast
1 large egg
100g (1/2 cup) mashed potato
Notes:
- You can use either milk or water.
- If you do not have milk, you can use water + milk powder. If you want extra milky flavor, use both milk and milk powder.
- If you use just water without any milk powder, potato buns might not be as rich.

Hey good recipe! Just a note when using stainless - salt can cause pitting so it's recommended to add salt once water's boiling and/or hot enough to dissolve the salt quickly. Adding in before turning on the heat can cause pitting in the metal ane degrade the cooking surface.
