As a person of greek heritage, I definitely agree that high quality EVOO is worth the splurge. Everyone should do their research on what brands are "real" EVOO and which ones are ripping you off (unfortunately very common in the US). Once I was able to buy evoo made in Greece (Crete specifically) it has made my dishes a lot better, especially the greek recipes I make.
I'm Spanish and I couldn't agree more. For me it's a basic, I even can get 5 liters bottles of EVOO from my hometown's food co-op so I'm sure not only is great quality also I'm affecting positively local economy and the environment since it doesn't need to be shipped through the country!

Just an FYI about Thrive, I’m sure it’s great if you live in a place like Portland where everything is expensive AF, but check their prices before you sign up. They are definitely not cheaper than my local stores (maybe if I shopped at Whole Foods, but I don’t) and I can’t justify the extra $60/year to buy more expensive groceries. As always though, Caitlin, I love your recipes. I would love an ebook! I have your salad book, but the world needs more! 💜💜

Blueberries have a lot of pectin, that's why it clumps. I once blended some and put it in the fridge to use later and it became jelly, it's really cool actually :D

I'm eating so much pasta it's ridiculous, I've even put on a bit of weight xD I mean there could be many factors like stress, not enough sleep or exercise and I'm probably not the only one but yeah, not eating my veggies ! I don't think we should be too hard on ourselves right now though, there will still be plenty of time to get fit and healthy after this is over haha. Also please don't pay attention to the negative comments, I think people are just stressed and on edge ! not cool to take it out on you though, I'm very grateful that you're still making content during this time !

It seems weird to see Thrive Market advertising at a time when they are restricting orders, delaying shipping, and struggling to maintain stock. They can't handle the customers they have, so why are they trying to bring in new customers right now?

I eat mostly vegetarian and entirely gf, and your recipes and vids were a huge inspiration, showing me that food can still be delicious and simple and affordable, all while gf and plant-based! I've been cutting down on animal products so much this past year, and you have played a huge role in that. :) Your one-bowl pumpkin muffins (which I bake as a bread loaf), chickpea pot pie, and 3-ingredient chocolate pb cookies are all staples in my kitchen. Honestly we just wing it - Dylan has a "zero waste" cold brew mesh thing (made from metal, fits a mason jar) that I fill with coffee. Then I stick it in a jar and pour water over it and let it sit in the fridge! If it's too strong, we thin it out with water. So we're definitely not professionals in the coffee department, haha!
I love a simple ~3/4C coarse grounds to 4 cups water and steep for 15 hours before straining :) there’s so much variation out there but this is my favorite after years of making it!

Is that clay vessel beside your kitchen window for making sprouts? ;D I am trying to find an inexpensive way to grow them myself, but all the sprouting trays, jars etc seem to be real pricy! Maybe you have some advice on that? ;) Btw, I wish my kitchen was so clean at least from time to time but it is just impossible with my dad and sister who are the worst at keeping any place tidy ;P Granola is the best, especially when in large chunks :D ! Recently we've been making a homemade one regularly as my fam really got into it :D I guess the pasta concept reminds me a bit about the hummus pasta, but in this case you have beans as a base for the creamy sauce. Great video and recipes. I had to go to the health foods store for pasta because the supermarket had run out of the pasta I like. Thankfully it wasn't too expensive and I also had to buy tahini there because the supermarket didn't stock it. Keep safe and well and hopefully this madness will be over soon.
Wandering Winona 🪐 blendtech is supposed to be as good as the vitamix, so I’ve heard. But pricey as well. Most good quality high powered blenders are. The nutribullet is a more affordable option if you’re just looking to make basic smoothies and sauces.

can you share a cold brew recipe?!
Honestly we just wing it - Dylan has a "zero waste" cold brew mesh thing (made from metal, fits a mason jar) that I fill with coffee. Then I stick it in a jar and pour water over it and let it sit in the fridge! If it's too strong, we thin it out with water. So we're definitely not professionals in the coffee department, haha!
I love a simple ~3/4C coarse grounds to 4 cups water and steep for 15 hours before straining :) there’s so much variation out there but this is my favorite after years of making it!

Is that clay vessel beside your kitchen window for making sprouts? ;D I am trying to find an inexpensive way to grow them myself, but all the sprouting trays, jars etc seem to be real pricy! Maybe you have some advice on that? ;) Btw, I wish my kitchen was so clean at least from time to time but it is just impossible with my dad and sister who are the worst at keeping any place tidy ;P
Granola is the best, especially when in large chunks :D ! Recently we've been making a homemade one regularly as my fam really got into it :D
I guess the pasta concept reminds me a bit about the hummus pasta, but in this case you have beans as a base for the creamy sauce. Pretty cool, I am definitely going to try it :D (Also, I've seen the recipe before but only now you've inspired me to test it out :D )

Great video and recipes. I had to go to the health foods store for pasta because the supermarket had run out of the pasta I like. Thankfully it wasn't too expensive and I also had to buy tahini there because the supermarket didn't stock it. Keep safe and well and hopefully this madness will be over soon.

I dont have a vitamix and Im broke to buy one and also Ninja is not available in my country. Can you suggest other blender brands? Cuisinart perhaps?
Wandering Winona 🪐 blendtech is supposed to be as good as the vitamix, so I’ve heard. But pricey as well. Most good quality high powered blenders are. The nutribullet is a more affordable option if you’re just looking to make basic smoothies and sauces.
