If you want your cheese sauce to stay liquidy instead of clumping when it cools down, add a little bit of apple cider vinegar to it. It breaks down the cheese and doesnt let it clump up
Just tried this recipe. I did the tots in the air fryer . They came out nice and crispy. My cheese sauce was 8.2/10 . Needed a little more of a kick might add more siracha next time. My animal style sauce came out 9/10. Delicious. My onions came out 6.4/10 . My small pieces were a little burnt my bigger pieces were good. I wasn't able to get the sweetness out of them . All together I gave them a 8/10. Hoping to get a 10/10 on the next try. Thanks for the recipe!

We made these last night....because after viewing this video it was ALL WE COULD THINK ABOUT! We did add some of our favorite The Hot Ones hot sauces instead of sriracha, used a spicy garlic mustard, and used a homemade chili sauce instead of Ketchup (that was a really good tip, thank you!). We also added thick cut bacon from our favorite German meat shop. We used coconut flour and ghee to make the cheese sauce a little healthier for us, haha, but not much! Gluttonous? Hell yeah. Will we make it again? Hell yeah. Often? NO. But for the Superbowl or a house party? Sure. But not for awhile. Gotta get my arteries cleared out first!

Sam!!! You need a silicone whisk. I hate the sound of metal when it scrapes against the pan. Plus if it's non-stick, it's going to tear it up. Enough of that though, the tots look amazing. Definitely going to try these.

i always add a teaspoon of paprika to my cheese sauce. gives it a good smell, color, and some added flavor.
