1. unsweetened cocoa powder - 1/4 cup + 1 tbsp (35 g)

A few years ago my son couldn’t have gluten or dairy due to a medical condition. Yes, these are mostly sugar, but he could eat them without aggravating his condition. They were a life saver for us. It made sticking to a grain and dairy free diet doable for him. They actually taste really good.
@@FuchsiaFire444 That’s a rude, smart-ass thing to say about a sick kid. He was struggling to find anything to eat that didn’t cause a medical reaction. So we made these once or twice a week to help him feel like he could eat something semi normal. I hardly think a few cookies a week will cause diabetes. We definitely didn’t want any medical or nutrition advice from you.

I just made these and they are delicious! I found that letting the mixture sit for about 10 minutes helped the batter set up and I could use a cookie scoop to portion the cookies. Be careful not to over bake them. I added some chopped pecans and that was really good too.
One batch made 10 three inch cookies. They are so fudgy! Great recipe. thanks.

You can actually cut the sugar by quite a lot and they are still really good, and much healthier. I cut the sugar by half and add a few mini chocolate chips, just a few on top of each cookie before baking, and they are amazing. Thanks for the recipe!!
That's great to know. I've made these substituting sugar free sweeteners, but so many of those are expensive, and this does take a lot of it for just a few cookies. I was worried the recipe needed the bulk of the sweetener. I can always adjust the sweetness with drops of liquid stevia if necessary but knowing it doesn't need the bulk of all that powdered sugar really helps. Thanks.

RUN and MAKE THESE! I tried this almost right away - but substituted powdered Stevia (I put the granulated in my bullet to grind it) instead of sugar. The stevia didn't act like sugar, so mine didn't spread like in the video. I did refrigerate the batter for the hour as recommended. Maybe I don't have to do that with the Stevia. Regardless of which sweetener you use (although I don't think I'd choose allulose because it softens things) just try them! My little dollops had a nice crunchy outside and a soft inside - absolutely addicting! My daughter liked them better than the full on sugar filled chocolate chip cookies she had on hand! Also - I used an air fryer - 300 degrees for 12 minutes was perfect in mine. These absolutely would make GREAT macarons with filling, and there is almost nothing but protein in it, depending on the sweetener and cocoa powder you use - a few carbs per batch for the cocoa, and if your sweetener has any filler like Stevia does. You can try allulose, monkfruit, erythritol, even xylitol, or actually Swerve for baking would be great. All those are natural sweeteners, not artificial. You can add nuts or chocolate or peanut butter chips, or even crushed sugar free peppermint candy, I think! THANK YOU Shaswathi Cooking!!!

I went to make a second batch of these and messed them up, but the 'mistake' is now my favorite snack and I hope I can replicate it! I use granular sugar free sweetener in my baked goods; in this case it was a combination of allulose, xylitol, and stevia. Not sure if it matters which you use. Anyway, I forgot to powder the sweetener before adding the cocoa and egg whites, so my batter was gritty. After a few expletives, I tried to save it by putting the batter into a blender. The 'cookies' didn't come out the same; in fact they aren't cookies at all. It all runs together, no matter how long you refrigerate it, into a sticky mess. I cooked in an air fryer oven in small batches at 300 for 11 or 12 minutes. What you get is a sheet of chewy stuff that looks like brownie brittle. Remove the parchment paper from the sheet pan, cut with a pizza roller into squares, and - since it is sticky on the bottom - fold each square over onto itself with the sticky side in. My daughter said it tastes like a s'more! I also tried putting a little peanut butter in before folding; that was delicious. I hope I can 'mess this up' again! Either way, I like the result, so I'll keep making it!
Sounds like one of my many times trying to be creative to save a recipe when I missed something or tried an alternative ingredient. Trial and error just makes for a better cook in the long run.

I tried it with allulose (no carb sweetner). After coffee and 1 cookie I had to come down from a chocolate high. It was very tasty. Cookies didn't puff up. I did 320 F but I think next batch I'll add a little baking powder. Definitely a keeper.

I wonder how the recipe would have turned out if you had included the egg yolks and mixed them into the batter first, before whipping the whites into a meringue and folding that in gently, using it as your leavening agent. Also allulose is a suitable sweetener for anybody who doesn't wanna use so much sugar.

I've just made a protein version: 50g of whey protein, 1 tablespoon of coconut oil, 40g of sugar substitute, 2 egg whites 30g of cocoa powder, about 30g of bittersweet chocolate chips. Taste very good and it has less sugar.

The video says 160 degrees Celsius which is 320 degrees Fahrenheit. I’m going to try 325 because I never heard of anyone baking at 320.

These cookies are delicious when warm. Only problem is they become hard as a rock after 8-12hrs.

This is true... however.. sugar and carbs together are worse. And you can cut the sugar down and use half sugar and half substitute. Or all sugar substitute. (Tho not sure how good that would taste).

Try this: 37 g cocoa powder; 158 g powdered sugar; 2-3 egg whites. Pour into small (loaf, or 4.5" × 8.5") baking pan and bake @ 350°.
This will give you a very chewy brownie and probably a better result than your last attempt. Two egg whites will give you more dense, chewy results; 3 will be a bit drier and cakier. The more air you beat in, the more lift you will get.
