They are fighting because she won't stop pushing his boundaries and trying to get him to do things he doesn't wanna do. He doesn't do that to her because he respects her and her boundaries/beliefs, but he also has different beliefs. If she wants to be with him, then she needs to respect his boundaries/beliefs as well.
There's actually some really bad blood between Islam and Hindu, due to the apartheids in the late forties early fifties, so it was actually really uniformed of her to ask someone who does, to a small extent, practice hindu to even consider it converting to it.

It’s totally cool to be an atheist if you want, but if you’re staunchly one religion, your partner needs to be the same. Also, if she knew anything about Islam, she knows that her husband also has to be a Muslim as women aren’t allowed to marry outside of that faith this relationship is doomed

You aren't breaking up with her because of her religion you are breaking up with her because her entire personality, behavior and belief system changed abruptly and she is trying to force it on you. Religion is a hard thing for some relationships, platonic and romantic. That's why it's often hard for religious and non-religous people to date each other, as both have different ideals and goals. Some make it work, but when it comes to some religions, that's just not possible as it's either their way or the highway. Islam, Mormon, Jehovah's Witness, Hinduism to some degree and a lot of the deeply religious (religious fanatic) Catholics. OP would not be the AH if he leaves his girlfriend bc of how she's acting. If they are not compatible, then nothing will make it work.

The only time I have ever seen this combination work out is when neither one of the parties involved was devout. Yeah they celebrated their major holidays like Divali and Eid but that was it. The downside was that their kids were a bit confused as to what religion they practiced. This was never gonna work out with OP and his girlfriend. They are incompatible and both the Pundit and the Iman will them so. The girlfriend wouldn't have stopped trying to convert him either
I was born into a Catholic family, but I'm an atheist now (for decades), I also don't care if someone else wants to believe in a deity. There are a few thousand religions on this planet. So do whatever makes you feel safe... But I do draw the line at people (meaning christians) trying to push their beliefs on me. It's always a you're going to hell kind of proclamation from them. Even their Jewish Jesus wasn't so pushy. If you believe the biblical stories... which I don’t.
