    This is my take on the Vietnamese Spring Roll, also called Egg Rolls. This is not authentic, but my family loves it when I cook them! Best enjoyed with lettuce and herbs with a delicious dipping sauce.
    Ingredients:
    1 packed spring roll / egg roll wrappers
    (In the freezer section of most major supermarkets with the pastry)
    500g / 1lb pork mince
    3 large carrots, shredded
    1/4 cabbage, finely sliced
    1/2 packet of bean shoots
    1 onion, chopped
    2 garlic cloves, grated
    1TB ginger, grated
    2 small bundles (80g) Vermicelli noodles
    Salt and white pepper to taste
    2 TB fish sauce
    1 tsp sugar
    Sprinkle of yum yum (MSG, optional!)
    Lettuce, herbs, and fresh chili to serve
