    Jowar Khaman Recipe :
    Servings: 20+ idli
    Ingredients
    - 1½ cups Jowar
    - ¾ cup rice
    - ½ cup urad dal
    - ¼ cup poha
    - Salt to taste
    - Oil (for greasing)
    Instructions
    - Soak 1½ cups of Jowar, ¾ cup of rice, and ½ cup of urad dal in water for 5-6 hours.
    - Soak ¼ cup of poha separately for about 30 minutes.
    - Drain the soaked Jowar, rice, and urad dal but save the soaking water.
    - Add the soaked Jowar, rice, and urad dal to a blender and grind them to a smooth batter, using the soaked water as needed.
    - Drain the soaked poha and grind it separately to a smooth paste.
    - Combine both batters in a large bowl and mix well.
    - Using your hand, whisk the combined batter to incorporate air into it, which helps in the fermentation process.
    - Cover the bowl and let the batter ferment overnight at room temperature.
    - In the morning, check the batter; it should be well-fermented and have increased in volume.
    - Add salt to taste and mix the batter well.
    - Grease a tin or a steaming tray with oil.
    - Pour the batter into the greased tin.
    - Steam the batter for 8-10 minutes or until it fluffs up like a sponge cake.
    - Heat a small amount of oil in a pan.
    - Add mustard seeds, curry leaves, and green chilies to the oil and let them splutter.
    - Pour the tadka over the steamed Khaman.
    - Cut the steamed Khaman into pieces.
    - Serve with your favorite chutney. Coconut chutney pairs wonderfully with Jowar Khaman.
