- Hey guys :) Tonight for tea I'm making another Scottish classic! Balmoral Chicken...also known as 'Flying Scotsman' and Highland Chicken. Basically a chicken breast stuffed with haggis, wrapped in smoked bacon and served with a mustard & cream sauce :) Delicious!
Here's what you'll need if you decide to give it a go:

Shopping List:
4 good tablespoons of haggis
250ml of chicken stock
2 medium sized chicken breasts
100ml of double cream
20g butter and another 10g of melted butter
1 Tablespoon Dijon mustard, try and get the one with the seeds….it’s a nice texture, I'm using ordinary Dijon mustard…the flavour is the same
4 rashers of smoked bacon per chicken breast…so I’ll use about 8 here, it just depends on the size of your chicken and bacon.

Let's Cook!
For the Chicken:
Pre-heat the oven to 200’C (400’F and Gas 6).
Use a knife to cut a slit along the side of each chicken breast. Do not cut all the way along, leave about 1-2cm at the ends.
Slot haggis into the chicken breasts.
Wrap the chicken in 4-5 slices of bacon.
Bake in the oven for 25-30 minutes until the chicken is cooked through.
Optional: cover the chicken breasts in foil for extra moisture.
Serve with vegetables and pour your sauce over top.
For the sauce:
bring your chicken stock to the boil and reduce slightly (you could add two tablespoons of whisky at this stage if you wanted)
reduce to a simmer......and add the cream.
Stir for a couple of minutes, then add the Dijon mustard.
Stir for another couple of minutes then add the butter....stir for a few minutes and that's it done! :)

You mention haggis, is that actual sheep stomach, or the stuff usually cooked within a sheep's stomach?

I have a question for you, since I cannot get Haggis here in Canada would it be possible to replace it by pork sausage meat or lamb sausage meat?
