Happy New Year Chef John! Thanks for the wonderful one-pot meals video. Everyone I knew had a recipe for American goulash from childhood. In my opinion, American Goulash always benefits from the addition of a chopped bell pepper or two, and a handful of sliced mushrooms. I love these classic comfort foods.
I am time poor and have 2 moderately fussy kids. I think they'll enjoy some of these one pots though. I'm looking forward to testing them out when school starts again next week and hopefully adding a few more dishes to the "approved" list. Thank you Chef John and Happy New Year
I'm eating on a one pot dinner tonight. Zuppa Tuscana! SO good. And so easy. Of course I make every recipe "extra," but it's a meal worth mentioning here because it is so easy to put together but has intense and delicious flavor and balance that's sure to impress even the most sophisticated palate

My Greek chicken & orzo with spinach will round out the group, I think. Easy to do, easy to have the ingredients in a box along with the few utensils needed, and the perishables in a small cooler! I think this is gonna work great!
I just made Chef's billionaire beans and franks with additions and substitutions appropriate for new year's. Bacon and pork jowl, pork based hot dogs, black eyed peas instead of beans, and some collards. So yummy, and all in one pot.
The thing about chicken soup is that simmering the chicken carcass and bones extracts the nutrients and minerals that nourishes the body. Better to do that at any time and freeze the broth, then add it to Cheff John's quick version.
One pot goulash as you made it is also great with drained/rinsed red kidney beans/green peppers or even a jalapeno added. Love this with cilantro/sharp cheddar and some lime.) We call it a dressed up chili with pasta.) Have done this also with leftover brisket and that was divine!!!
I've been looking for easier ways to eat at home after working all night (in a restaurant, surrounded by tasty but very decadent, rich food). This seems like a good way to start getting into cooking when tired. Way less cleanup.
I thought dish 1 was fajitas. That's what I make for a one skillet meal solution with some of these ingredients. The second one I though would be a standard beefy noodle from scratch. That's something that I do. If you add sour cream and mustard to beef noodle, it runs into a decent stroganoff instead. The Chicken and Sausage with Rice looks interesting. I was thinking about doing my own version of this with a mushroom sauce and bratwurst. Chicken Noodle Soup is great, though I find I like Chicken and Dumplings better. It takes mostly the same ingredients plus heavy cream and flour. Dumplings can be made by just kneeding water with flour and salt, cut and dropped into the soup. Yum! Goulash is a thing that I haven't made in a REALLY long time. I think I probably will next month. But then again, Chili Mac is tempting too. ☺☺☺☺
My favorite one pan dish of yours is the Utica greens and beans. I make it several times during the winter, it is vegan, and fulfills the New Year’s Day of beans & greens. Would you consider re-filming that recipe?
It all looks great, I’m trying them next. I have one question regarding the Stroganoff and the addition of a shot of vodka. Vodka a tasteless distilled beverage and then cook off the spirits. So what does it contribute to the dish? I’m think I would rather throw back that shot along with a few more and toast some old friends in Russia. Za Zdarovje!😋
I have 3 flatula's in my big utensil jar, because they are THE most used in my kitchen and I need backups for my backups! Thanks for the one pot ideas, looking forward to more of them for sure. Also, I think it might be a crime to use high end expensive hamburger in good old cheap goulash. Just sayin ;)
Being that Ive been watching Chef John since about 2007 or so, Im pretty sure that Ive made all of these recipes at least a couple of times each. Just remember to remove the bay leaves from the American Goulash.
Chef John, can you please do a coffee nut bread? I’m not really sure what the recipe is. I’ve made something very similar before with little success. I think Seagrams used to make it or something like that
No chicken broth. Use beef broth. Chicken broth will take a from the beef flavor. And only use Swanson in the box for the best taste. The can leaves a metal taste in your food. I'm not a fan of soy sauce so for me it would be Worchester sauce which I love. Yes, the cheese for me would go on top as an optional garnish. Campbell's Soup sells this as Chili Mac. LOL
My kinda meal! Because I like a lot of flavors/ingredients, but I can't eat too much ☹️ Stupid metabolism.... Anyway, these make great freezer meals too👍
My family American Goulash recipe is very similar, but we add potatoes to the broth and cook them with it. Also, we don't add macaroni, instead we make a box of Kraft Mac-n-Cheese. We ladle the mac-n-cheese into the bowl and pour the goulash over it, and serve with a slice of butter and bread. Good stuff.
