My FIL and I were discussing that this last weekend😊 Now that I've seen the rest of the video, I have to comment that the chile colorado (red) enchilada sauce you prepare is far removed from what we prepare here in Southwestern New Mexico.

If it tastes like soap, then you are 'one of those people ' who are genetically disposed to that. It's supposed to taste citrusy. I was wondering because it doesn't quite taste soapy to me, but it is unpleasant. So I asked the Great Google what it was supposed to taste like. There are suggestions that if you crush or pulverize it, it tastes better to us

At a bit before the 10:11 mark and talking about Queso Dip add ins. Try adding cooked Mexican Chorizo to the mix and you will have the classic Queso Fundido which is as fun to eat as it is to say. Though maybe not as fun as saying Shakshuka...............
Hey folks! John is a great chef and does Mexican food well... his way! 1 suggestion though... use some Mexican cheese in your recipes, especially Cotija crumbles on any tacos... classic and darned tasty! Mexican fresh cream (crema fresca) is good too for those who don't like so much sour cream (crema agria)... And many Mexican cooks add a tsp of chicken bullion powder to the finished juice of the beans before adding by spoonfuls to the frying beans, and then taste for saltiness before adding salt. Salt added before the beans are done makes the bean skins tough and that is not desirable for refried beans. Happy cooking!

I thought this was related to our "Fiesta". 😆 In San Antonio, TX, it's Fiesta right now, which is a city-wide celebration commemorating the heroes of The Alamo and the Battle of San Jacinto. Its a display of San Antonio's rich, diverse culture with so many events happening throughout the city for both family and adults. We have a big parade, a carnival, concerts, etc. It lasts multiple days and it's so popular that some local businesses give employees the day off for the the parade. I work in hospital and the census has been so low these past two days cuz everyone is out partying and having family time, no one has time to feel sick :) This video is more than appropriate right now even though it wasn't your intention. :P
Years ago we had a Mexican gentleman that my mom worked with come over to prune our apple tree and he got out of his truck in the driveway and pointed at one of the weeds and he said oh my gosh that's epizote! He explained what it was asked if he could pick some, which he did, and we grabbed some too! I have no idea how it got there but I think there are still some old seeds that I might try to grow. It can't be that difficult to grow considering it was growing in our Rock covered driveway

Try actual culantro, cilantro is actually coriander. They are 2 different plants and culantro won't taste like soap for you.
