Yikes! One of my old babies has been modified! I'm retired from GGT and, depending upon the number, probably drove it numerous times. Yes, the rear reading light was original.
As for the roof vents, look up Trans Spec. They make an emergency escape roof hatch. You need two. Do not let the air bag suspension intimidate you. It is do-able. So long as you know how to safely jack it and support the body above the axles. I can tell you how to do that.

I think you might wanna collab with a few car repair youtubers around you to 1. get the help you need and 2. gain some traction from their subscribers. this is not a one man job especially when you are full time single dad. RUclips money does not come in until you have 1k sub + 3k views, and to live properly you need at least 150k subs.
You need that coolant pump to move hot water to the front for defrost - a safety imperative. You don’t need to keep that OEM pump. An aftermarket will work and can be mounted on the fire wall rather than under the seat.
Do you have an electric block heater? If not, get one. You need to pre-heat the block. Otherwise, you put some diesel in an old skillet and light it with a torch. Slide it under the oil pan. BBQ the Detroit for a half hour. This is better than relying on starting fluid, with will destroy your engine.

Buy a bus for 5k, spend 30k bringing it up to safety and comfort standards.. it's not for everyone.
This is very true. With my 1966 fishbowl, I spent roughly $7,000 on new brake drums, shoes and related brake items, including labor.
