Super Delicious Chicken Piccata

- Crispy chicken cutlets topped with a tantalizing lemon/wine/parsley sauce. The ingredients I used are listed below. To get the printable recipe, please visit my website here: www.agardenfor... you for watching.
For the chicken:
1/4 cup all-purpose flour
A generous pinch of salt
A semi-generous pinch of pepper
2 chicken breasts, sliced horizontally in half and pounded to 1/2-inch thickness
2 large eggs, beaten
1 cup seasoned dry breadcrumbs
2 tablespoons butter (for frying)
1 tablespoon olive oil (for frying)
For the sauce:
1/2 cup chicken stock or broth
1/2 cup dry white wine (such as Sauvignon blanc)
The juice of 1 lemon
3 -4 tablespoons capers, drained
Salt and pepper as needed
3 tablespoons butter
1/4 cup fresh, chopped parsley (I used dried parsley from my garden)

Chicken Piccata is one of my favorite dishes of all time!!! I am pleased with myself that I learned to make it and I serve this wonderful dish several times a year. I always try it when it’s on the menu when we go to a nice restaurant-luckily, and thankfully, there is a very nice Italian restaurant in our small town where fantastic Chicken Piccata is served!!!

Hi Kevin! Came across this Golden Oldie from two years ago. Part of what I'd call your early collection, while looking for one of your other chicken recipes. Having watched, decided to make this one for my dinner tonight instead as it's super easy and looks absolutely yummy! I'm not a fan of capers but, as you know, I love chicken and lemon dishes and I have the French vermouth so I'm all set.

A rolling pin works good also instead of a meat mallet! This is one of my favorite receipes Kevin and even if you don’t want the breading it is still lovely. I add capers and lemon wedges and serve with rice pilaf or orzo.❤ Congrats on your growing viewership!

Hi Kevin. This is one of my favorite meals, Chicken Piccata! The flavor Is the best. It is also good with. side dish of peas. I think the lemon is the key to making the taste buds dance. Thanks for this lovely video, and congratulations on your RUclips milestone!
Lemon, parsley and capers are some of my favourite things. It occurs to me that if one wished to intensify the flavour even more, one could add a little finely grated lemon zest to the breadcrumbs. My mother was fond of caper sauce which she would serve with baked cod or haddock. Also, we would, occasionally, have a leg of mutton simmered slowly with onion, carrot and small white turnip, flavoured with a muslin bag containing black peppercorns, a few cloves and a piece of blade mace. The meat would be dressed with a bechamel sauce made with some of the meat stock plus milk to which plenty of capers and some of their pickling liquid was added. This may sound pretty gross to younger consumers and in the UK it is difficult and fiendishly expensive to source mutton or hogget (older lamb). I sometimes just prepare this using a couple of lamb shanks in the same way using a slow cooker. I think 🍋 lemon is particularly loved by me because during WW2 citrus fruit was unavailable. I have a distinct memory of the first time I was presented with a pancake minus lemon juice and offered jam instead. I burst into tears! My mother was disgusted with this lack of stoicism and it was made very very clear to me that I should brace up! Enough of this rambling - it's what happens when you're 90+! I'm definitely going to do the chicken piccata asap.

I made this tonight. The chicken was delicious but we found the combination of lemon juice and capers in the sauce was just too tart (sour) for our taste buds. I added a spoonful of maple syrup to the sauce which we thought made the sauce more to our taste.
