1, 肉要先摔,出胶后(肉泥状;摔30下可以达到),打水(高汤);瘦肉可以吸入高汤的水分,口感更嫩。
2, 肉卷的肉馅,还是应该放一点老姜末,或姜汁的;像类似胡椒粉这类去腥增香的调料,应该在放入蔬菜类辅料之前,就加入到肉馅里面,直接与肉馅发生作用,才能发挥它最好的作用。
这是传统的福建春卷,放姜汁完全不是原味!
