Btw I made it this weekend using your video and I added beef tendon and it came out really amazing!!! My hubby says it was better than the ones we get in the Noodle shops!! Great recipe!

Absolutely, but depending on the cut it may not come out as tender. Still worth a try!

Chu hou paste. You can find that in any asian food market
soybean paste is also known as doubanjiang. I used the nonspicy version by Ming Teh

I don't quite understand why you boil the beef first before sautéing. It seems like you would be losing a lot of the beef flavor into the water.
