3 Easy One Pot Vegan Meals - Quick & High Protein

- These one pot meals are amazing for people who don't want to spend much time cooking but also want a delicious and healthy meal. They all contain about 30 grams of protein per serving and can easily be made in less than 20 minutes.

Recipes
Ginger Garlic Noodles
1 tbsp roasted sesame oil
3 cloves garlic, minced
1 thumb sized chunk of ginger, grated
1 large red bell pepper, thinly sliced
1 large carrot, grated
1 cup fresh snow peas
1 cup frozen edamame
3 1/2 vegetable broth
8 oz of legume pasta of your choice - I used spaghetti
Sauce:
2 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp maple syrup
Garnish: toasted sesame seeds and chopped green onion
Directions:
1. In a large pot or saucepan, saute garlic and ginger in sesame oil for a minute before adding the rest of the veggies.
2. Add the rest of the ingredients and bring to a boil. Simmer for approx. 10-12 minutes or until pasta is cooked through.
3. In a small bowl, mix the sauce ingredients together. Once pasta is cooked, removed pot from heat and add sauce.
4. Serve with toasted sesame seed and chopped green onion garnish.
Creamy Garlic Mushroom Pasta
4 cloves garlic, minced
1 medium yellow onion, chopped
2 cups chopped mushrooms
1 can white beans, drained and rinsed
1/2 cup sun-dried tomatoes, roughly chopped
4 cups vegetable broth
8oz of legume pasta of your choice - I used shell pasta 2 cup shredded kale
1/4 cup nutritional yeast
1 tsp garlic powder
1 tsp onion powder 1/4 tsp salt
1/4 tsp black pepper
Garnish: chopped parsley
Directions:
1. In a large pot or saucepan, saute onions and mushrooms for 5 minutes or so until the mushrooms are almost fully cooked then add the garlic and sauté for another few minutes to cook the garlic.
2. Add the beans and mash the beans as best as you can with a fork in the pan. Mix together with the other ingredients and add the sun dried tomatoes.
3. Add the vegetable broth and pasta. Bring to a boil and simmer for approx. 10-12 minutes or until pasta is cooked through.
4. Remove from heat and add the rest of the nutritional yeast and spices. Stir together well.
5. Serve with fresh parsley on top.
Tomato Herb pasta
1 onion, chopped 3 garlic cloves, chopped1 bell pepper, chopped 1/2 large can crushed tomatoes (400 ml) 2 1/2 cups veggie broth
2 tbsp Italian seasoning
8 oz of legume pasta of your choice - I used spiral pasta
A large handful of spinach
Garnish: chopped fresh basil and chopped black olives
Directions:
1. Sauté onion and garlic together in a large pot or saucepan for a few minutes before adding the bell pepper and Italian seasoning.
2. Add the rest of the ingredients except spinach. Bring to a boil and simmer for approx. 10-12 minutes or until pasta is cooked through.
3. Serve will garnish on top and enjoy!

These all look awesome but I LOVE creamy sauces made from beans so I've got that mushroom option high on my list.

Ciao! Italian gramma here, with a tip for you.😊 When adding the long spaghetti or linguini pasta to the broth, go slowly. Hold a small handful of noodles at one end and swirl the opposite end in the boiling broth. As the noodles soften and bend, swirl them around the pot until you can drop them from your hand. Repeat with the rest of the noodles. 🤗
Some people like to break their pasta. I know I do. Everyone is different in that area
Thanks for the tip nonna, I will try that next time for spaghetti italian style for sure. But for an Asian dish I will eat with chopsticks I think breaking the pasta is the way to go!

Pro tip - in the first recipe instead of chopping the garlic use the ginger grater and just grate the garlic ;)

I made a slight variation that may help
Added 1/4 tsp of Asafoetida powder. This helps with not being gassy. Add this to any beans and lentils dish.
Other additions/mods
garlic chop: 8 cloves
Red chili flakes: 1 tsp
Paprika: 1/2 tsp
Pepper: 1 tsp
For pasta used
Banza chickpeas penne 227g
Barilla red lentil Rotini 250g
Spinach substitute for kale

I LOVE your videos and all the sauce ideas! One pot wonders are the best. I would LOVE if you added the FIBER content in with the Nutrition break down. Most of us don't work out 2+ hrs a day like you do, and we see the blood sugar spike with even the healthiest of carbs. It decreases our stress at the carb content when we see the gazillion grams of Fiber along with the carbs. ;)

Thanks for these high protein ideas! So far I've only made the garlic ginger noodles. My advice for others would be to add your veggies in halfway through our less. Or cut them larger. Mine almost turned into mush. I pan fried up some fava bean tofu to put ontop for even more protein cause why not.

Great pasta recipes
Thank you for making the time to test and refine the recipes. As the news from medical and other studies flow in it confirms times and again that having good toned musculature (some even static as much muscles as possible and here I would assume naturally, without PED etc) is best predictor of health and longevity, having additional information about the protein contents of a meal and constructing meals with enough protein while keeping it plant based seems like an important information to keep in mind when planning weekly meals. In that sense I find your work very useful. Once again - thank you!

I made the creamy garlic pasta. Mine ended up kind of liquidy (more like a stew), but I really like stews and soups, so I was happy with the end result. I think I know where I went wrong though. I only mashed about half of the beans (I was feeling lazy). I also used regular pasta, not sure if it needs less liquid than chickpea pasta. Next time, I'll definitely mash all of the beans and start with less broth.
I really like that this recipe is lower in fat, less expensive, and top allergen friendly compared to a nut-based or coconut-based sauce. Great option for a creamy vegan sauce.

Ok, nifty trick with the onion in the third one! They all look great. I one time made a spaghetti w/ white beans, greens & sun-dried tomatoes. Pushes all the umami buttons. I'll def. switch to cooking noodles with the sauce next time. Great video of one deep pan meals! ~Tracy
