I'm pretty sure the reason this works is because when Mario's (Toad's) intended next position is out of bounds, it doesn't check for collision with ceilings, allowing you to go straight up through. Usually it would reset your speed to 0 so you wouldn't maintain this, but holding Z keeps it locked at -4000. Nice find.
It's probably possible, but Toad goes so fast during a walljump that it's rather hard to time just right. Most of the time you either clip into the side of the gate because Toad is going too fast, Toad doesn't walljump at a good angle, or he doesn't get enough height to reach the platform. Doing what's in the video is much easier and safer.

I mean... i always do that in sm64 and releasio restricts only B and Z buttons
