This is a recipe for a Tomato Spice Cake. Also known as a Tomato Soup Cake, a Mystery Cake, or a Surprise Cake. Of course, the "mystery" of "surprise" refers to the addition of a can of tomato soup to the cake batter. This cake was first made with canned tomatoes and was considered a cake you made in the winter. Later the recipe changed from using canned tomatoes to a can of tomato soup. I know it sounds a little weird, adding tomato soup to a cake batter. But when you think about it, it isn't so weird as tomatoes are a fruit and they are juicy sweet. While not absolutely necessary, I like to cover the top of the cake with a cream cheese frosting, as its tanginess pairs perfectly with the sweet and spicy flavor of the cake.

My mother made this cake all the time. It is DELICIOUS!! You should point out that Campbells Tomato soup is the best soup for this recipe, because it has the purest tomato flavour. Many other brands of tomato soup have herbs and spices in them that throw off the flavor of this cake.

@Southeastern777 I discovered it by accident. My mother only used Campbells tomato. I never really thought of there being any difference in canned tomato soups. One time I bought a different brand. The result was terrible. The herbs and spices in the soup threw off the entire flavor and no one could even eat it.
Unfortunately, I had made it for friends who had come for dinner. One bite was all anyone took, the rest was left on their plates and ended up in the trash. I was so embarrassed...lol.

This is so very interesting, I’ve never heard of this type of cake before. I knew about the chocolate mayonnaise one but this is great. I’m going to try it out.

Hi FitAussieAngie the mayonnaise replace the eggs in the recipe, so next time you run out of eggs go ahead and replace them with mayo (egg + fat) 👍. How things are down and under 🌞😍😎

I’ve made tomato cake before but used fresh green tomatoes and without spices. It tasted like an apple cake and it was delicious. I’m going to try this recipe. Your desserts are always a winner in my book. Tfs. Always stay safe!

My grandmother, Myrtle Shumate, made this often during the summers when her garden was bursting with tomatoes, but she used an 8" x 8" baking dish, and the bigger difference is she used fresh tomatoes, brown sugar as well as 10X sugar (does anyone call it that anymore? AKA confectioners' sugar..), lots of butter, regular flour but also some cornstarch. (This is not a complete recipe - I am just pointing out some differences is all.) If she had extra tomatoes she'd make a glaze for the top with pulverized, cooked-down tomatoes with a bit of sugar and cinnamon. (We never had it iced, only glazed or plain.) That cake was out-of-this world. Miss you, Granny. 1917 - 2001.

I've watched a few recipes of this cake and it's interesting that they are all different but somehow, they all got a perfect cake.
One recipe used no eggs, another one no baking powder and one mixed in a can of water, but I have to say yours looks the best. I like that you reduced the cloves and added nuts.

Novice baker here. I love watching your videos! In most of your videos (if not all), you use metal baking dishes. Have you ever used dark non-stick or glass bakeware? Would you recommend lowering the baking temp by 25 degrees like other bakers suggest when using either of these two types of baking dishes?

I have been baking this cake, Tomato Soup Cake, for years...from the original "Joy of Cooking". Rather than nuts or raisons, I add dates, as that was all I had at the time I first baked it, and it became a habit.

hey Stef, i finally made this bread last night to gift to my therapists office, and got up to ice and drop off, in my pj's to their office, so i really couldn't cut a slice w/o it being too obvious! asked the staff if they cuold guess the mystery ingredient, so hopefully i'll hear something! when i made black bean brownies the first time, they had no idea, but loved them, so time will tell; i'll let u know if i receive any guesses, ok? i happened to have a can of Campbells in my pantry, so that why i made it, but turned our beautifully, regret not having taken a pic!!:): kelli
Just a tip. Whole nutmeg in the spice aisle is often expensive. And you are supermarkets if you go to the international section you'll find cheaper spices which usually include whole nutmeg among the spice selection. It's usually Badia brand.

Lovely tomato spice cake
I remember as a child my grandpa found this recipe in local paper, my cousin made it that same afternoon so that our entire extended family could taste it...it was very good. Think Wanda put a caramel glaze on it.

You can find this a lot in Maine and the Canadian Maritimes and I had one particularly delicious version that my Great Aunt Floris made with a small drained can of crushed pineapple and she did a 50/50 of toasted walnuts and dried cranberries because, well, it was Maine after all..dontchaknow...
