Brioche Pizza

  • This pizza is another example of the flexibility that the brioche dough offers. I tend to think of this pizza as a French pizza because of the use of brioche, goat cheese, oven roasted tomatoes, Calamata olives, reconstituted dried shiitake mushrooms along with meat flavored tomato sauce.

    I’ve never seen pizza made with a brioche dough before, I was concerned how it would turn out but it looks amazing and the color you got on the pizza crust is beautiful.

      Yes, it works perfectly and is especially well suited for thicker crust "Sicilian style" pizzas. Don't get me wrong, you can still make thin & crispy pizza crust with the brioche but if allowed to be a little thicker it bakes like bread under the pizza.

    Gave it a shot, John, but not a fan. The brioche dough was extremely rich and seemed to burn before the cheese melted. If I ever try it again, I'll use a 375F oven. Interesting video, though.

      Thank you and BTW - the brioche dough is supposed to be richer. That's why the French having been making them with brioche for decades LOL!!

      Yes, I think we're all feeling some of the effects of this virus shutdown, some more than others. I'm glad that I don't own a restaurant right now. I've had 7 full service ones over the years and I can't imagine the frustration of being forced to close for an extended period of time. Good luck to all on this !!

      I'm glad you liked it but I didn't think I was "piling it up high" lol Actually, I thought just the opposite. I thought I was being conservative. What do I know ?? LOL

    Oh, wow! I'm really excited to try this. Can I use a dairy alternative for the milk, like almond milk?

      If you're referring to the brioche dough - you can use water instead of the milk.
