I'm in Australia and while I can find almond butter, it's so expensive that, unless you are pretty well off, you couldn't afford to, or justify the expense of, making these. To buy a package of almond butter that is big enough to get the amount needed (one cup), you'd have to buy a container that costs between AU$15 (for a container that's just under a cup's worth) and AU$40 for about a 4cup container. Seriously, who can justify that sort of expense? Don't get me wrong, these look like nice cookies and, being coeliac, I often have to pay for more expensive GF ingredients to make things but these really are prohibitively expensive to make - in Australia, anyway.
They look identical to the chocolate chocolate chip cookies my best friends mom use to make for the 4th of July when we were kids. 30 years later when we asked her didn't remember making them. I've been on the search since. Thanks, I will be making these and if they come close....Heaven.

kayleenburdick i agree. People can choose not to make it when they dont feel like it. But consider what these people are saying as well. Myself included. Why? The way they handled terms such as “sugar free”,is just too light and misleading. They could have been clearer. Instead of saying sugar-free, they could say “this is packed with natural sugars”. Or “refined-sugar-free”. And for goodness sake, they’re professionals. What’s so wrong about being proactively clear? It’s part of being responsible.

Yum! Next time you have Olivia on, will you please ask her to explain the difference between refined and unrefined sugars? Substituting whole blended dates in place of granulated sugar makes sense to me, but I’ve always been curious to know why granulated monk fruit sugar is healthier than granulated cane sugar.
Literally all you have to do is blend the almonds lol, blend them for long enough until the natural oils start to release to make it creamy, than add whatever you want like salt, sweetener or flavorings.
I like Gemma's recipes because they're really accessible all around the world. I don't know yet how I feel about Olivia's recipes because hers are like the total opposite of Gemma's, using all these wacky ingredients I never even heard about that are also super expensive!

I kept these vegan by adding apple sauce in place of eggs and a little bit more almond butter instead of butter. They’re baking now. I also added a little bit more baking powder because fruit usually makes baked goods dense. We’ll see in 12 minutes

Monkfruit sugar is also a form of sugar though. Sugar is usually made from sugarcane. Tbh doctors will advise diabetics to avoid (or take in small/moderate amount) of fruits because all fruits HAVE sugar, even though it is not brown/white sugar. I actually do not get the point of substituting sugar with another form of sugar aka in this case, monkfruit sugar.

We Love Food nop, this isn’t a low carb cookie. It contain sugar: the worst carbohydrate ever for any kind of diet. There must be some mistake in the description because it does contain sugar (sugar is sugar no matter the source: cane, agave, honey, maple, coconut, fructose, dates, etc)

should work just fine; though you might have to add some more almond flour or cocoa to get the right consistencs (cause honey = sugar + water, so there is extra liquid in there that you don't have with "dry sugar")

@@FahadSaadah well, that also depends on how you like your cookies and how thick/thin your almond butter/paste is and how big your eggs are. It's not an exact science. But as far as the honey is concerned; there are ~17.5 grams of water in 100 grams of honey. If you want to use only honey as a sweetener then you would have ~160g honey, which means 28g water you need to compensate for. As a rough estimate I would use a classic dough flour-to-water-ratio, which is 5 parts flour, 3 parts water. So for the 28g water you'd need roughly 46g extra almond flour / cocoa powder, which is about 1/4 cup. I wouldn't dump in all at once; I'm not sure how much more water especially cocoa powder absorbs compared to flour it it does soak up a little more. But the most important part is: When the dough seems right to you; e.g. similar to a cookie dough you know then it should be alright. - Hope this wasn't too technical ^^ (eyeballing it I'd say; if I use a lot of honey in a recipe I just take a regular spoon from my drawer, dig into the flour/cocoa powder/almond flour / whatever and throw it in there)

Ok I get what you're getting at. As a diabetic when you say flourless and sugarless I'm thinking of low carb cookie. Can the sugar be substituted for an artificial one and leave all the other ingredients the same?

@@biggerbolderbaking I spoke in ignorance. I honestly did not know what coconut sugar is. I was under the impression that it's coconut powder mixed with sugar. I just looked it up and was pleasantly surprised to find out what it actually is. I am leaving here the explanation in case anyone else is interested. Coconut sugar is a natural sugar made from coconut palm sap, which is the sugary circulating fluid of the coconut plant. It is often confused with palm sugar, which is similar but made from a different type of palm tree.

I love the idea, but then again if you are deathly allergic to nuts and almonds and use sunflowerbutter, how are we suppose to do this? It has ALMONDFLOUR! Im really dissapointed because like she said ”if you are allergic to nuts” I had in mind that this would be the perfect recipe, but no another dessert i still can’t eat or even bake without dying....
you can substitute almond flour with other ones like coconut flour, sunflower seed flour, or oat flouer oat flour is really easy to make if you have oats in your pantry, just pour some into a blender and chop until fine

There are gluten free all purpose flours you can buy that would most likely work!
You can use coconut flour. Or oat flour, but the texture will change a little bit

Yummmmmmm I wanna make this but with vegan butter instead of almond and xylitol instead of those other sweeteners.
Xylitol might not work as well here, as it won't caramelize when heated. Sugar not only sweetens, it also helps with the structure.

Hi. Can you make this with honey as a sweetner?
should work just fine; though you might have to add some more almond flour or cocoa to get the right consistencs (cause honey = sugar + water, so there is extra liquid in there that you don't have with "dry sugar")

@@FahadSaadah well, that also depends on how you like your cookies and how thick/thin your almond butter/paste is and how big your eggs are. It's not an exact science. But as far as the honey is concerned; there are ~17.5 grams of water in 100 grams of honey. If you want to use only honey as a sweetener then you would have ~160g honey, which means 28g water you need to compensate for. As a rough estimate I would use a classic dough flour-to-water-ratio, which is 5 parts flour, 3 parts water. So for the 28g water you'd need roughly 46g extra almond flour / cocoa powder, which is about 1/4 cup. I wouldn't dump in all at once; I'm not sure how much more water especially cocoa powder absorbs compared to flour it it does soak up a little more. But the most important part is: When the dough seems right to you; e.g. similar to a cookie dough you know then it should be alright. - Hope this wasn't too technical ^^ (eyeballing it I'd say; if I use a lot of honey in a recipe I just take a regular spoon from my drawer, dig into the flour/cocoa powder/almond flour / whatever and throw it in there)

Ok I get what you're getting at. As a diabetic when you say flourless and sugarless I'm thinking of low carb cookie. Can the sugar be substituted for an artificial one and leave all the other ingredients the same?
Monk fruit sugar is an alternative sugar. You can use truvia/swerve/lakanto or a mix of erythritol and monk/stevia and you'll be grand

Hi, I have a question - why #sugarfree when there is brown sugar and coconut sugar inside? And you've also mentioned it in the final part, that you can't tell it's sugarfree cookie. Or these sugars are not considered as sugars anymore? :) Thanks.

Okay, I get that most people have the option to use coconut products, what about substitutes for coconut if you’re allergic?
You can use oat flour, but texture will change a little. It will not be 100% the same results

@@biggerbolderbaking I spoke in ignorance. I honestly did not know what coconut sugar is. I was under the impression that it's coconut powder mixed with sugar. I just looked it up and was pleasantly surprised to find out what it actually is.

Coconut sugar is a natural sugar made from coconut palm sap, which is the sugary circulating fluid of the coconut plant. It is often confused with palm sugar, which is similar but made from a different type of palm tree.
She had me at first when she said sugar free, but she had 2 kind of sugar in her mix.........

I love the idea, but then again if you are deathly allergic to nuts and almonds and use sunflowerbutter, how are we suppose to do this? It has ALMONDFLOUR! Im really dissapointed because like she said ”if you are allergic to nuts” I had in mind that this would be the perfect recipe, but no another dessert i still can’t eat or even bake without dying....
you can substitute almond flour with other ones like coconut flour, sunflower seed flour, or oat flouer
oat flour is really easy to make if you have oats in your pantry, just pour some into a blender and chop until fine

You can use coconut flour instead. Coconut is not a nut. Will this work for you? If not, give bananas a try and would love to learn if it does
