Since you have asked what recipes from around the world should you gry to recreate, considering easter is coming, maybe give polish Mazurek a try? Every family has a different recipe, but in summary it is a Bake that consists of a couple of thin layers of Short crust pastry, chocolate ganache-like filling and other layers (some people mąkę poppy seed or caramel filling, in my family it was always a layer of marmelade. Delicious! I really hope you will give it a try!
Do you have an alternative recipe for those who are allergic to coconut? I've been looking for GF recipes for my cousin who is celiac and allergic to coconut as most GF product/ recipe's have coconut in as they keep pushing it as a superfood. (I'd have to use natural sugar instead of the substitute as they trigger IBS symptoms in about 90% of my family!)

Olivia emphasizes that the sugar substitute is vegan and natural as if it were because of these two facts that it is „better“ or „healthier“ than regular table sugar. Regular sugar is also vegan and natural, since it is dervied from plants. A commenter before me also mentioned the coconut oil. Science shows, it is not a miracle health food. This is by no means to say one shouldn‘t use it. This way of presenting just implies (in my ears) coconut oil were healthier than other fats, which it is not. I really like your alternative baking videos because it is always fun to try new things! :)
Completely agree with you. Fat is fat, and saturated fats also exist in plant-based products. For sugar it's a bit more nuanced. Different types sugars will have a different glycemic index and will impact people differently. The sugar alternative in the video is interesting, unfortunately sugars with a high fructose contant are a big red flag for people with IBS so agave and honey are no go if you suffer from this condition. While I completely agree that it's best to stay away from super processed foods, this recipe brings very fatty ingredients (coconut oil, coconut milk) so I don't consider it a healthy alternative.
Instead of coconut milk can I use a low-fat milk or buttermilk? Also about the coconut flour, could you use maybe almond flour instead because thats the only other flour I have😕❔
You can use milk or buttermilk for the cupcake batter for sure. These are totally different things. almond flour is not absorbent, and coconut flour is highly absorbent. The coconut flour in this recipe gives the cake its structure. That is not to say that it is impossible, but I think it is best to use a blend of GF flours if you are not using coconut. You can of course try it, it will taste good, but I am not too sure about the texture,

Granted I do use spelt at times, buts so much heavier then normal flour. I do have a question though. Is there a way to turn your puff pastry recipe into gluten free?(I have used almond for it twice but only when I make pizza pockets)

Nice recipe, but coconut oil is not a health food. It has been in fashion for some time, aided by some clever marketing, but science is on the side of using it sparingly..
Agreed. It contains just as much saturated as butter, except butter tastes better lol. Plus cupcakes are never really "good for you" i.e. don't expect to het your daily dose of vitamins and minerals from them. A totally misleading statement.
Hi, Lauren! I presume you mean "chocolate"? For every 3 Tbsp of cocoa powder, you can use 1 ounce of unsweetened chocolate. 2oz of cocoa powder in my recipe is about 7.5 Tbsps, so you need about 2.8 oz unsweetened chocolate here.

Coconut oil is high in saturated fat. At least make sure it's organic and cold pressed, and limit consumption if you have high cholesterol. Also, using an ice cream scoop is much easier than a spoon to portion the batter into the tin.

Audrey Laras you can use canola oil or any seed oil, almond flour and instead of coconut milk for the frosting just use heavy cream.. because i think with any vegetable milk it will get a lot softer.. you will have to try the proportions..

No way to pre-heat a microwave. This does not work the same way as the traditional oven.
