    I'm in charge of making the gluten free cupcakes & cookies for my son's wedding reception; which I'm so happy to do. I'm definitely adding this recipe to my list. Thank you for this!!! P.S. I have Celiac disease so... I've been baking gluten free for years. I certainly still have a lot to learn though!.

    Looks delicious! Could I use this recipe to make a single big cake in a cake pan or bundt pan? How would I adjust the baking time and oven heat? I'm guessing that a shallow cake pan would be best or the baking time would be very, very long since these small muffins take about 25 minutes.

      I'd take a look at a cake mix, Gluten-free if you can find one and use those times and temps as a guideline. You should be able to do this online.

      @@LetThemEatGlutenFreeCake That is great tip, problem is I live in Sweden and there really are hardly any cake mixes to buy here; we make cakes from scratch. (I think cake mixes are almost exclusively an American thing.) What makes it more difficult is that had these muffins been made with ordinary flour the oven heat would have been higher and the time it took for them to bake would've been much shorter.

      @@am1156 I don't know what size you're going for, but I've made this cake recipe into a 9-inch round layered cake and the video for that is right here on youtube (it's actually linked at the top of this video). You would have to monitor the cake in the oven to make anything larger than that, but I would start from there and then just keep checking it at maybe 5 minute intervals. I hope this helps!

    I am severely allergic to gluten
    (anaphylaxis allergic.) I can't find any gf powder cocoa. Can I melt my pure chocolate instead of the powder? Ty❤

      All unsweetened cocoa powder should be naturally gluten free. What country are you in?

      @LetThemEatGlutenFreeCake I live in Pittsburgh PA. They all have fillers of gluten. Maid Mist used to be gf, but they changed. The ones I see have gluten.

      @brendaowens8382 Yes, all-purpose flour is definitely gluten. It would definitely cause damage to someone like me. It is unbelievable how many companies add it to products. Ex. Pepper that is ground some companies add flour. I have to grind my own.

      @brendaowens8382 exactly! Although, we found some on the internet. We looked up 100% GF Cocoa! You can't get it anywhere in any area around. It has to be shipped. GF is a life-threatening issue, and it is overlooked. Would you ever imagine prescriptions pills have gluten? I have special orders of prescriptions. When the Company stops making it without a gluten additive, I go to a different company.
      Ask your pharmacist.
