I love fry plantain and also cooking /boil plantain with potatoes,sweet yam and green bananas but never had plantain cake so I shall try and bake myself one.

Hi Jamelia,first confession I am a white girl so that's the first thing.....but when your daughter said "never be afraid to say what you think is right because it could help someone else..."I just started crying and haven't stopped,god it set me off.It is so true and something I have battled with and still do all the time,second guessing myself and whether to say something or not,self delete,self censor and all that,it is so hard to speak up sometimes.Plus I am definitely going to try and get hold of some plantain as I think as a vegan it would be a great on the go snack as well as loads of other uses as you pointed out,I think it is a rich source of protein.
