I like the interpretation that it was the power of The Ring itself that destroyed The Ring, as Gollum made a vow on the Ring, to serve Frodo faithfully. Then, just as Frodo warned, the Ring twisted his vow. So when he bit Frodo's finger off, The Ring Itself exerted it's own power to punish Gollum.
