The Thai ginger item is called 'galangal'. I make Thai curries (red chicken and massaman beef) in the Instant Pot as a one-dish meal, throw in the ingredients and pressure cook it! I make Indian curry on stove top regular way. I wish the head chef would post here so I could say Hi.
