@@yourKitMak it wasn’t the ribs unfortunately, it is as you described more like a mutton stew. But after so long on low heat everything was super tender and tastes amazing. I spoke to a Hong Kong chef and he told me best to use fresh bean curd sheets… hahaha good for him, my local ‘Loon Fung’ only sells dry 🤣😅

Thank you for sharing all the tips and alternative ingredients we can get easily in the UK to cook our favourite dishes! Your tips of stewing the whole lamb breast rolls kept the meat together and made such a difference! I used a pressure cooker and stewed for 15 minutes and added the bean curd sticks and cook for the last 10 minutes. This saved time and electricity/gas! Looking forward to your all new recipes.

想請問我這邊沒有羊腩可改用什麼部位?lamb saddle或lamb shoulder?
如果在英國很易買到羊腩 breast和羊骨腩ribs,如在港的確很難,唯有用 Shoulder 及 頸位。羊展 shank 全隻炆都可。

lucky you. I don't have butcher around me therefore I could not get the ribs.

在WAITROSE有骨冇骨都有得賣, 我不大同意你介紹的薄腩, 我比較喜歡兩溝, 有骨的也有腩, 咁好正
My dear Edward, 我相信你誤會了我意思,😅😅😂!骨腩是最好的,骨腩+崩沙腩是真正羊腩煲用的位,即我所說的蝴蝶腩,我在片中已用中英文字註釋標明了。骨腩不是間間有,我那邊找了 5-6 間不同超市也沒有,我意思是無既話只用有薄腩已相當不錯,雖沒有骨腩連着但仍是蝴蝶腩的部位,這是我片中說明的。而且薄腩易買易入屋。都係好野呢👍🏻!😅但如果沒有骨腩,只用薄腩都很好,不讚成放其他不適合的羊骨肉,一來仲貴,二來高低差別大不同,個個最後走去搶腩來吃,剩下其他骨肉不吃,浪費了,這就我的意思。
係,我最後網上找到了Waitrose 有ribs。但好多地方都無Waitrose, 我那邊就無啦!遠遠的那間也很簡陋無甚麼賣,而且不是日日有,其他超市都難搵骨腩ribs,你常找到是你的幸福,但沒有骨腩有薄腩平價食,也是快樂的。
同一超市同一日期點解一包是7鎊一包是7.5鎊一公斤?
請問若果只加多d lemon 葉,飛香茅,得吾得?
