    CHILAQUILES VERDES is a delicious meal whether enjoyed for breakfast, lunch or supper. CHILAQUILES VERDES are made with crispy fried corn tortilla chips then smothered in a delicious tomatillo sauce and topped with queso fresco or cheese of your choice, then topped with Crema for an added plus, whether your tortillas are homeade or store bought you can create this amazing easy dish. CHILAQUILES can be made in a green sauce or red sauce, and are a unique way of using yesterday's tortillas and leftover salsa. In my house, we love our chilaquiles for breakfast with our favorite side of refried beans and fried eggs, I think it's a super easy dish that can also be enjoyed with shredded chicken, beef or chorizo. CHILAQUILES VERDES can be prepared ahead, by frying your tortilla chips then lightly salting them and storing them till needed and doing the same by preparing your salsa and keeping in the fridge till your ready to pile the chips high with your salsa verde and topping it with your queso FRESCO and crema.
    INGREDIENTS
    9 medium TOMATILLOS
    3 serrano peppers (optional)
    2 tsp chicken bouillon
    3/4 C. water (add more slowly if needed)
    6 corn tortillas (as needed)
    vegetable oil (enough to fry chips)
    1/2 small onion divided
    2 large garlic cloves
    1/2 tsp ground cumin
    2 Tbsp vegetable oil to fry tomatillo sauce
    1 chopped green onion (white and green parts)
    1 Tbsp Dry Epazote leaves (optional)
    1/2 tsp oregano
    1/2 tsp sugar
    salt (to your liking)
    pepper (to your liking)
    1/4 C. finely chopped cilantro
    SIDES
    Refried beans
    fried eggs
    Crema
    QUESO fresco
    thinly sliced onions

    My grandmother Trinidad and my mother Candelaria were incredible cooks. They both would say that there food was echo con amor ❤ and it truly was. They both have gone on to the LORD but the memories of them in their kitchens stirs my heart. Thank you

    Best chilaquiles recipe ever, you are the best! Explaining it simply and so authentic and organized makes it so fun to watch and eat!!!     Now instead of chicken tacos, I want chilaquiles verdes for dinner! What a beautiful presentation and picked up your tips on when to take out the tomatillo and also adding a little sugar to the sauce itself. We're huge fans of chilaquiles here at home and I'm always preparing different ways. Going to definitely use this recipe probably this weekend. And speaking of weekends, oh my goodness those are some delicious chicharrones con salsa roja! Both me and my sister in law loved them. And not to leave Johnny out, I poured some salsa on his fried eggs which he loved. Here's to a happy, blessed and wonderful rest of your week my dear and wonderful amiga.

      Thank you dear friend, they are super delicious, I especially love them with the QUESO fresco and the crema, sometimes I add machacado, or fried bacon and love them that way as well. I'm so glad you and your sister in law enjoyed the CHICHARRON en salsa ROJA and glad your Johhny got to enjoy the salsa as well (never leave him out) the days are flying and I can't believe it!     Had chilaquiles hundreds of times... but never made it. In the process now. Only difference is I add a Chile Morita to my sauce. I really love the smokey flavor it adds to sauce. Will top mine with steak as well. Mixed in a pastor taco last time I ate them at a local restaurant. Not sure how that isn't on any menu's. Loved your presentation. Hope mine turn out as nice as yours did!

    It's very different from us here at home. We use long green Chile. My mom made it different as well and my mother in-law showed me different and I make them like my mother in law. But it's nice to learn other ways of doing things. Oh Rachel, you look like my cousin. When I 1st saw you I freaked out and showed my family your picture. They also agreed, so I have another cousin, that's you.🥰

      Sure! I have canned tomatoes in the back row, and in the middle and front I have some with canned bbq sauce, beets, grape jam (from our grape vines) bread and butter pickles, and canned green chilies...I have canned them all, and I like having them on display just because it makes me happy.     My Grandmother always picked the epizote out of the dishes she cooked and I do too, just because she did. A friend told me to leave it in because it is very good for the digestive track. Just an FYI if anyone is into medicinal herbs.

      What does this herb taste like?? Is it necessary/essential to Have in your Mexican Dishes?? What does it do to enhance the dish?? And why use “Oregano?” Isn’t that an Italian Herb!!??
