Very nice cooking Dude, good camera work from Flo too! This brings back memories! As a VERY hard up student doing my degree, plus working three jobs to pay the bills, basic food was my lifeline. Spam fried rice got me though, along with beef stew, vegetable soups, stews, belly pork and roasted veggies, stir fried chicken, baked beans and jacket potatoes and all the simple and affordable staples......15 years later I’m very lucky to no longer worry about affording food, but still go back to eating the simple staples sometimes, full belly and nostalgia, nom!

40+ years ago, a buddy and I went on a backpacking trek in Lassen Volcanic National Park (my favorite). We drove up on a Thursday after work and slept in the "walk-in" campground just inside the South Entrance. The next morning, we drove north up the main road to the Lupine Picnic Area -- amazing vistas and with lots of beautiful lupine in bloom around us -- and had breakfast: Over our backpacking stove, fried spam and scrambled eggs eaten with an amazing vista before us. Then off onto a 30 mile loop in the middle of the park until Sunday evening when we drove back home to Silly Cone Valley. Until that weekend, I had never thought of Spam as tasty. It was, though! Good to see you on-screen again, Ella.

I actually learned something today. I’ve never used a wok but I have one coming next week. I can see it will take some practice controlling the heat and keeping the food moving. Everything truly does happen pretty fast when you get down to cooking. You really need an assertive approach and some confidence, especially with delicate foods like eggs. You don’t actually get a sense of that when you watch someone who has been doing it a while. They make it look so effortless and fool proof. I’m excited to learn.

I do, however, enthusiastically endorse the inclusion of cubed smoked sausage in fried rice. I also frequently use leftover Costco rotisserie chicken (minus the skin) for the protein element in my fried rice. Keep up the good work, and thanks to you both!

I grew up mostly in the south where Spam was eaten often. I was not a fan. However, when I lived in Hawaii and found it was also very popular there, I found I loved it cooked with soy sauce. I think it would be terrific in fried rice! It's also great cooked with au gratin potatoes and broccoli in a casserole!
Looked good. For people that don't like spam for...reasons, I have a solution. We just had St. Patty's Day. Right now supermarkets are filled with discount vacuum sealed corned beef brisket points and flats. Soak them for 12~24 hours to draw out some salt. Then rub (I use Mrs. Dash Smokey Chipoltle because there is still plenty of salt in the brisket) throw them in an electric pressure cooker for 1h30m and a natural release of about 30min. Let it rest and portion how you want. Or do what I did and throw it in a smoker for two hours using hickory chips. Just get a crisp on it when you go to use it in a dish like fried rice, hash, or sandwiches.

This is one of my fave fried rice version coz it's the easiest to make. I just add garlic and sesame oil with mine for some extra kick. Super delicious! I can eat this everyday! Love you both and your channel 🥰

DudeLum The flavor was actually Hickory Smoked, but it was still delicious. I noticed about 6 or 7 different flavors and I/m sure Bacon was one. I cooked it in my rice cooker/multi cooker instead of a wok. My husband said I could make that again. I thought it would be good for breakfast. Thanks for the inspiration. Dinner was good tonight! Dude, love your video and Ella is a clone of Flo! Which rice do you use most often, or do you use different types for different dishes? I tend to always go with Basmati, but I'm wondering if another type would be better. Thanks for your wonderful videos-they are always first on my watch list.
Mar D. Forgot to mention what kind of rice. Jasmine is our preferred type. Basmati does hold its shape but doesn't seem to absorb as much of the flavours.

Dude is right, Spam is good. My husband convinced me years ago it is a decent potted meat. He eats it all the time. I eat it occasionally. Teriyaki Spam is an interesting alternative. Easily available in Hawaii. Our local Smart and Final Extra is carrying it.

I had a newfound sense of appreciation for spam afterward... and the gift shop sells every variety of spam out there... more than just regular and low sodium that we see in stores...

Dude, love your video and Ella is a clone of Flo! Which rice do you use most often, or do you use different types for different dishes? I tend to always go with Basmati, but I'm wondering if another type would be better. Thanks for your wonderful videos-they are always first on my watch list.
Mar D. Forgot to mention what kind of rice. Jasmine is our preferred type. Basmati does hold its shape but doesn't seem to absorb as much of the flavours.

Dude is right, Spam is good. My husband convinced me years ago it is a decent potted meat. He eats it all the time. I eat it occasionally.
Teriyaki Spam is an interesting alternative. Easily available in Hawaii. Our local Smart and Final Extra is carrying it.
Spam! My favorite......I get the 3-pk Spam from Sam's. When I get my new Blackstone 36" griddle, I see lots of fried Spam in my future. Dude should cook the fried rice & Spam on the Skottle(easy camp food).

I make some fried rice a couple of times a month using leftover chicken or pork, and even occasionally Spam. My husband and I enjoy it as a change from "American, Southern" cooking! Also, since I am half Japanese, I grew up with rice and Spam. :)
