    Love fried rice! The one ingredient I think is essential is green peas. The elderly chef the absolutely blew my mind added the peas in early in the ingredients progression so they ended up with tiny ‘burny bits’ as he called them on the pea skin. It just added a different flavour and was amazing. I have gauged every dish I’ve had since to his dish.

    Probably controversial but I cook my rice the day before with chicken stock and onions/garlic. It makes the fried rice extra tasty.

    I'm a big fan of fried rice, and appreciate that you taught me how to make it. My repetitive mistake is too much dark soy and oyster sauce, I always end up with really dark fried rice. I need to learn how to back that off. God bless you two.

    Hi Flo and Dude. I love fried rice even my neighbors love it. I marinate my shrimp which i use a pound of small so everone gets several with ginger, green onions and soy sauce. I use 3 eggs also but no peas or carrots growing up in Chicago no one used peas and carrots in any restaurant. I do use bean sprouts, love them and lots minced garlic. I use dark soy for the great color and finish off with sesame oil and green onions. It really turns out great, one day i hope to experiment with other veggies and meats so thanks for this.     Char siu fried rice! Oh snap! My favorite. I always say I’m going to cook extra when I make it, and I do! But it never makes it to the freezer. My family just love the stuff! I’ll do it one of these days. In the meantime……..thanks, Flo. Happy Sunday! 👍👍

    If you crumble the cold rice in your hands first, it helps break up the clumps first before cooking

    Happy to see this. Thanks Flo!!! Here in Puerto Rico your Chinese restaurant food always comes with fried rice unlike New York where you get white rice and pay extra for fried rice. Quality of the fried rice can vary greatly from one restaurant to another Happy day to you and Dude

    It was delicious! We used pancetta cubes from Aldi and little pieces of serrano ham, so it was a bowl of International fried rice!

    Yes, i love fried rice too especially when i do not know what to eat. It is just like one meal get it all. My family staple too when we go out and eat and each person can have some rice with some other dishes. Yes, in this economy situation, every cent count. Thanks for sharing 😍

    I don’t like carrots in my fried rice either. I do add garlic and brown onion to it besides all the other ingredients you used.

    Looks so good, and simple! I’ve always been nervous to make fried rice. We’re trying to focus on eating lower carb during the week, but this could be a really good “carb day” dish!

    Leftovers fried rice. Add scrambled eggs, can't go wrong. My childhood thing was to add ketchup to my fried rice, for that extra zip and moisture.

      Not enough room to film in our kitchen and we have a glass top electric stove, so the wok won’t work on that.

      Just curious, but I have 2 cats, do yours destroy the house when they have the zoomies?? I am kinda wanting a small tree this yr, ( I haven't had a tree up in maybe 10+ years) but I don't want to have to redecorate it every day! 😢 What do you all do about cat vs tree?

      I honestly don’t know what the difference is… I’m thinking maybe the skin? Because you can fill them with whatever you like and they are both usually deep fried.

      ​@@FloLum It's definetly the skin. The spring rolls I have eaten, had an almost pastry, very flaky, like skin, and were thin, finger-sized. The eggrolls on the other hand were baked in an oven, and were much larger(maybe 2 inch by 4), resembling a 'pillow', rectangular shaped, with pinched ends and a very definite crunch. But yeah, the fillings were basically the same.

      Sorry… I haven’t tried using quinoa, chicken yes, making sure it’s cooked through properly… but you can definitely try and see how it goes.

      Search for Chinese BBQ in Google maps and ask for char siu or BBQ pork.

    The thing with the rice...cut a few slices of ginger and throw them in there with the rice before it cooks. It creates an awesome flavor when it's done. Then take the ginger out and let the rice cool in the fridge overnight before using it for fried rice.
