  • Slow Cooker-Fiesta Chicken Stew
    Serves: 2
    Per Serving:
    1 Leaner
    3 Greens
    3 Condiments
    1 Healthy Fat
    18 oz. Boneless Skinless Chicken Breast cubed or 12 oz. cooked (leaner)
    1 C. Jicama peeled and cubed or 4.58 oz. (1 green)
    1 C. Spaghetti Squash peeled and cubed or 5.46 oz. (1 green)
    1 C. Canned Tomatoes 5g. Carbs or less or 8.46 oz. (1 green)
    3 Tbsp. Old El Paso Red Enchilada Sauce (1 cond)
    1/2 Tsp. Cumin (1/4 cond)
    ½ Tsp. Oregano (1/4 cond)
    1 Tsp. Fresh Minced Garlic (1/2 cond)
    2 Wedges of Laughing Cow Light crumbled (1 cond)
    3 oz. Avocado sliced or diced (healthy fat)
    Peeled and cube Jicama and Spaghetti Squash.
    Place all the ingredients except the avocado and cheese in the slow cooker OR Insta-Pot for 8-10 minutes OR Stove Top for 20-25 minutes or until veggies are soft and chicken is completely cooked.
    Cook on high for 4 hours or on low for 8 hours stirring occasionally. If stew is too thick you can add water a little bit at a time (about ¼ cup).
    Serve hot and top off with avocado and cheese crumbles. Enjoy!!!
