Almond Flour Biscuits, Low Carb, Gluten Free, Wheat Free

    1 cup plus 2 Tablespoons of Almond flour
    1 tsp Aluminum Free Baking Powder
    0.5 tsp Sea Salt
    2 Tablespoons cold Grass Fed Butter
    ¾ cup egg whites (or 3 large whole eggs - this will make the biscuits more yellow)
    Preheat oven to 400F. Mix almond flour, baking powder and salt together. Add butter and mix using a pastry cutter or fork until the mixture is crumbly. Next, whisk the eggs until they are frothy and mix them with the almond flour mixture until combined. The batter will be thin. Place in the fridge for 15-20 minutes. Divide this into 4 or 6 portions (depending on how big you want your biscuits) and place in a well-greased muffin top pan. Bake right away for 10-12 minutes. Remove when golden brown. Makes 4-6 biscuits.
    Nutrition at 4 servings/batch = Calories 223, Carbs 7, Fat 20, Protein 9, Sodium 550, Sugar 1.

    I learned this great trick for cutting butter. Freeze the butter and use a cheese grater to make small butter bits.

    I just made these, I used 5 egg whites and beat them into stiff peaks with a hand mixer. This is the BEST "bread" recipe! They are soft and fluffy and taste like bread and they rise! I want to cry, thank you so much!

      louiethemouseful I haven't made these in a long time but I don't remember them being eggy. In my experience the yolks are what make it taste eggy.

    BEST KETO BREAD RECIPE! I just made this recipe. I didn't change it at all. I just ate my first Bacon, Egg, and Cheese biscuit I've had since I started Keto 3 months ago. I'm telling everyone that THIS IS IT! I've tried a lot of Keto bread recipes and my search is over! I printed it and taped on my kitchen wall. That wall is a "spot of privilege" lol. It is only the 3rd recipe to make it on the wall in 3 months. Thank you so much for sharing your recipe and I'm so glad you're generous!     I made these just now. They are wonderful! I added the whole three eggs. I baked them in my large muffin pan. They came out up to two inches high. Tastes like corn bread, even better.

    I followed your recipe to the T and my mixture was MUCH thicker than yours, so I added one more egg white and it was still much thicker. I have it in the fridge now cooling. I PRAY they come out good.
    About 30 min later:
    I realized what I did. I used 3 egg whites instead of 3/4 cup. So I took the mixture out of the fridge and added another egg white, baked them, and they came out PERFECT!!! This will go in my file with my favorite gluten free recipes. TY sooooo much for this recipe. It is AWESOME!!! Can’t wait to try it as a sandwich and also next summer on my Monday night card ladies. I will make strawberry short cake for them with fresh strawberries and whipped coconut cream!!!
    I’m eating one right now with a little butter and apricot preserves. YUMMMMM!!! 💕

      It is probably grain .Watch Dr Doug Kaufman on You Tube. He says it is Fungus from storing grains is the problem. I’ve heard people go to other countries and they can eat bread and no problem.

    I just made these. Husband is thrilled and so am I. These were easy and delicious. I used my dough blade in my food processor to cut in the butter and since I am a southern gal, I also threw in some bacon fat.

      @@aztecwarrior1421 you could do 1/2 butter 1/2 bacon fat or 3/4 butter 1/4 bacon fat using same measurements from the recipe or however you want

    Oh my goodness. Where have you been all my life?! Lol. I was diagnosed with diabetes type 2 several years ago, and now my doctor is adamant that I must start bringing my numbers down....the weight scale, the blood sugar, etc. Going keto seemed like a good way to go, and here today, I find you! You can be sure I will be watching you often. Your show is also a plus for my daughter, who is gluten intolerant. Thank you for all of your hard work!

    I made these into donuts! After they were warm from the oven, added a little vanilla and icing sugar swerve, then when they cooled a layer of 100% chocolate bar warmed with butter and swerve icing sugar and poured on top. heavenly.

    So, you've come up with a excellent recipe for biscuits/muffins......now, have you got one for self-restraint?
    I made this recipe and added 1Tbs of psyllium husk and 1Tbs of nutritional flake yeast and a drop of liquid sweetener. The texture of these are like light muffins and would make incredible little cakes if you add sweetener. I put some chocolate ganache on top of one which I had made with heavy whipping cream (reduced), cocoa, vanilla and sweetener and it was incredible.
    The possibilities for this recipe are endless - you could flavour it with orange extract and make a cream cheese/orange frosting; you could flavour it with cocoa; you could make a vanilla cake, a cinnamon cake. Oh boy!
    Great recipe and the oven temp and timing was perfection. I usually end up burning my baked goods when I follow the instructions exactly but not this time. Many thanks!

    I JUST tried it yesterday! SO GOOD! I used coconut oil because I cut off dairy and it TASTES so BUTTERY! oh my goodness it's a great vegan biscuit if you replace the butter! and it's not dense and dry like most GF recipes! Adding this to my arsenal!

      Skarlett87 Hi, did you try a vegan version? I was wondering what you used to replace th e eggs and how much. I was thinking of flax eggs or some aqua fava beaten a little but wasn't sure whick and how much. Would sure appreciate any guidance because I can't eat eggs. Thanks!

    Always delicious. We made them recently using the whites of 3 large eggs and 1 whole egg(cage free from TJ's) and upping the butter slightly. They came out fantastic. These with the gravy and a fresh tomato from the garden,breakfast doesn't get much better.

    I made these tonight using whole eggs, and it worked pretty great! Came out a little "yellow" but wonderful! Also used melted butter to mix with dry ingredients, and then fridged it all after adding the whipped eggs. Thanks for the awesome recipe!

    My god these came out like Popeyes biscuits but much more moist. Incredibly delicious!!! You are a low carb queen I have used several of ur ingredients from various videos and all made them so much easier to be low carb.

    HEY!!!! I'd almost given up on low carb bread as it tasted "eggy" and I've gotten to the point that eggy bread makes me ill. I've been experimenting with all kinds of recipes with many ingredients with limited success. This recipe produced the most authentic tasting bisquites - so good. I followed your directions, except adding a little more salt, and the results are amazing. The only danger is eating to many of them! My favorite, simple bread recipe for now on! Thanks!

      You can also find more scientific studies showing that eggs & dairy are incredibly healthy and necessary for a healthy body. Eggs are considered the perfect food by nutritional scientists. You can live off just eggs if you wanted too..and many people do actually. And dairy has been consumed by countless healthy cultures for centuries. By I guarantee you that you will not find any cultures who lived off flax or chia. When you have to go out of your way to find a plant to substitute for something healthy like eggs and dairy that our ancestors have been eating forever..then that should be a warning to you.

    WHOA!!! Just baked my biscuits and ABSOLUTELY LOVE THEM!!! So easy-peasy! (...Although in order to get a 3/4 cup of egg whites I used 5 eggs--yikes!) I baked the batter in 4 porcelain ramekins with buttered, parchment-lined bottoms. Exactly 12 minutes after popping them into the oven out came perfectly baked biscuits with golden-brown goodness on the outside and soft, textured bread in the center. I'm even making myself a breakfast sandwich for dinner tonight--Ha! This recipe is a keeper for sure! Thanks for a great recipe!! :)

    I just made these and they were pretty good. I used two extra large eggs because that's what I had on hand and I didn't have time to chill them either. They were pretty eggy tasting so maybe next time I will just use the egg whites. I really like how easy this recipe is and it takes no time at all to whip these up. I do think I'll make them again, thank you for sharing the recipe.

    I found that I didnt need to refrigerate and they still come out really good. also I sprinkle everything bagel seasoning over the top of them 10 mins in and they come out amazing :) thanks for the recipe.

    "Gardening With Vincenzo" here...Being "cursed" with having both Celiac Disease and Diabetes, I am always looking for a Low Carb , Gluten Free, Diabetic Friendly Recipe...Definitely going to try these with a 50/50 almond flour and coconut flour substitute and additional egg with some garlic and onion ...These look fab...Thanks for sharing !

    I made these today. The texture and crunchy edges are great. There is very little flavor, so next time I will add more salt. It is a perfectly good biscuit to go with a fried egg, and maybe even better to split and make it into a sausage biscuit, both of which would add flavor. I make my own low carb ice cream that uses egg yolks but not egg whites, and I hate to waste egg whites which is why I tried this recipe. I will try it again.

    I’ve been on keto for a month with great results and your gravy and biscuits will be our supper tomorrow night. Another thing I want to try is a southern treat called chocolate gravy using almond flour, eurythritol, cocoa and almond milk. Should go great with your biscuits. Thanks Lisa

    I like this recipe best of all the keto bread recipes I've tried -- mainly because there is no "eggy" taste. I doubled the recipe and divided it into 12 biscuits. I used paper cupcake liners (sprayed with coconut oil) because I didn't have a cupcake pan or other biscuit pan, and they came out fine -- I just sat the liners on a flat cookie sheet and filled them with the batter. Once baked & cooled, I froze the biscuits, then take them out as I need them. Very convenient! Even the smaller size is great for a hamburger slider, and I use them for lunchtime sandwiches, too.     Lawd Jesus help me!! I just made these and they are Awesome!! No egg taste. I put a little Truvia in it and I made them 3 inches wide in a silicone pan. No Sticking. They were great with my home made strawberry jelly! Thank you so much and God bless you!!!

    I just tried this recipe for the first time and I LOVE it! I'm new to GF baking and haven't had many successes yet but this recipe is delicious and easy! I also thought the ingredients are easy to find and not too expensive (so many recipes call for half a dozen eggs or more and taste like paste). I used unsalted butter and I'm glad I did because it it a bit salty for my taste ( I also used 3 whole eggs ) but still so yummy. I didn't have a muffin top pan so I used cupcake liners and they worked out great. Thank you so much!

    These are a wonderful biscuit. The texture is soft yet not crumbly...the outside has a delicate light crispy crunch. I whipped my egg whites with a hand mixer creating more of a froth. Maybe that is why they peaked in the center as well as baking them at 400* ...they cut beautifully. They can be made into a sweet or savory in my book. This is a keeper! Thanks for sharing.

    Just made a batch. Thank you for such an easy way for a non Baker. They came out easy using coconut oil in pan. Using the Wilton pan. I'm on the Keto diet and this should be ok for me.

    I just made these easy and delicious biscuits and they turned out Great! I have a muffin top pan also but, I got seven biscuits which was the only normal looking biscuits and the other six had muffin tops and / or rings attached to them. I had more batter apparently than the author did. I allowed my biscuits to stay inside the oven longer so I had a much prettier looking biscuit color-golden brownish which was very tasty.     i am not at all trying to be negative when I say this, so please keep that in mind. Made these last week just as the video showed...the texture was awesome. Very amazed by the few ingredients that made this excellent texture. Even a week later, the texture is still soft, moist, and holds together. The taste, is disgusting. It tastes like egg-flavored bread. NOT trying to be critical. Added the gravy recipe and that was SUPER bomb. Just by itself or with Peanut butter or jelly, not a good taste. Just my opinion. Any thoughts from good bakers out there, I'm open to advice. :)

      Agreed! I thought I was the only one that thought that. Also it was too salty for my taste buds. I'm going to try reducing the amount of eggs by 1/4 cup and adding 1/2 cup of sour cream. As a bonus I will add chucks of cheese an onions to give it more flavor.

    Being Diabetic AND having Celiac Sprue, I am always on the lookout for Gluten Free Low Carb Bread products and recipes!
    I am going to try this one with a few minor differences just to see if it will work and if it does I'll be a happy man !

    Thanks. This is so much easier & better than having to melt mozz & somehow work butter into it. I used 3 eggs - turned out great. Toasted 1 & made poached egg + bacon & a little sprinkle of cheese for a nice breakfast sandwich. Just like the 3 min. muffins, I think these do benefit from toasting. Just a little too tender if not. BTW I use 2 sets of Mini springform pans which I feel aremore versatile than these muffin top things. You can still make muffin tops in them, but they are also useful for individual molten choc. cakes, cheesecakes etc. I also make pot pies in them. Brownies made thin with homemade ice cream filling for ice cream sandwiches !

    Just made these and they were fantastic! I used 3 large eggs, not egg whites only. Biting one plain had a hint of egginess, and I wonder if that would be minimized by using only egg whites. The texture was fantastic, and by simply spreading butter on the biscuit the hint of egginess disappeared. I sliced mine in half and put honey and butter inside and was really impressed with the satisfying taste and texture. I can’t wait to make the sausage gravy to go on top. I can tell these biscuits are going to work perfectly under the gravy.

    I have been dying to try these with your sausage gravy. So since I am having surgery tomorrow I thought that my last meal should be a good one, not knowing weather or not I would like this I thought I'm gonna give it a try. OMG it was AMAZING!!! I didn't have the pan like u used but I used my brownie pan that is about the same depth only it is shaped like flowers. Wow they were so pretty, I only got 4 but could only eat one. They are filling. I made the sausage gravy but I didn't have the xanthan gum, but I used cornstarch and it came out just fine. Thank you for all you do. Hugs

    Since I have friends that are allergic to tree nuts, I use quinua, ground, millet, ground, buckwheat, ground, brown rice, ground, and ground sunflower seeds for that perfect nut flavor! Mix equal amounts of all the grain flours and ground sunflower seeds, use both baking powder(aluminum free) and baking soda, 2 teaspoons of each, 1 teaspoon of kosher salt, no eggs,(some people have egg allergies), use 100% vegetable shortening or lard and blend with your gloved hand till flour mixture looks like course crumb, add just enough whole milk buttermilk and mix in and hand roll with gloved hands with shortening or lard on them to keep them from sticking and place on pie plate and put a thumb print in the middle of each one! This is your popup indicator that they are done! Brush with melted shortening and or butter, or lard, put into a hot oven 425°F until they are golden brown on top and bottom, about 25 minutes! Enjoy!

      Should you decide to turn them into scones, use monk sugar as your sweetener and fold in your favorite dried fruit!

    I love your cooking process of showing the ingredients and the outcome of the product. You should get your own channel cause I was confused with Robert Magary. I've been looking for almond flour recipes. I see making the biscuits in my near future....as soon as I get a muffin top pan.

    Definitely need to get a pastry cutter. Use almond flour all the time, first time I’ve heard of keeping it in my freezer. I forgot it is a nut based food just like my almond milk which I do keep in refrigerator. Anxious to try this recipe 👍 looks amazing 🤩 Phoenix Az 🥵

      You may want to get a bigger muffin top pan, depending if you are making larger burgers or not. They sell the larger ones online

    Sorry for the delay in replying. Did you try the whole egg thing? I think part of the fluffiness of the biscuit is from the egg whites being slightly whipped so I wouldn't expect that from whole eggs. We would like to hear how it came out though.

      Mine didnt turn out like this. I used 3 eggs and threw the yolk away ...mixed like you said but mine came out thick not thin like yours. They are in the oven now. The texture was like thick paste when putting in the oven..kinda stiff..not sure what I did wrong..hope it works

    Maybe I live under a rock, but this is the first time I've ever heard of almond flour.

      You're not. It's relatively pricey though. So many options today, both at the grocery store, and on line. I want to eventually use almond flour exclusively, in my baking. For now I'm using about half of both regular flour and the almond unless it's not recommended.
