I ended up mixing in Monk fruit sweetener and ground cinnamon and then I also sprinkled Monk fruit and cinnamon on top to make these more appealing for my son who is six. These were fabulous either way!

I made these. This was the first and Only keto bread recipe that came out good. They were a dry biscuit for sure, cooked through the inside perfectly. Now if anyone wants a sweeter version they of course can add a tsp or tbsp of coconut sugar or other sweetener. But these came out very good. I followed this recipe to the except i made 12 mini biscuits. My son even ate one. I will be making these Again but gu our size, double the recipe to make 8 bun size biscuits. I'm seeing alot of comments saying how good these are but also stating they are a smidge dry how is that even possible if almonds butter and eggs are used wouodent the fat content keep these super moist?
@@uglydoll6361 I am guessing part of it is that it's a matter of personal taste and how they describe food. But, almond flour and coconut flour are very different than your run of the mill AP flour, so if someone is hoping it will be like the biscuits they grew up with, they are definitely a bit different. FWIW however, I personally find all traditional biscuits to have more of a crumb and to be more dry. That said, if someone puts in too much coconut flour, it is highly absorbent and it could cause these to be more dry than intended.

Thanks for the tip. I might try oat or soya whipping cream if that works too. My problem with gluten free baked goods that they are almost always too dry, these scones look so dry too (no offence. It's not a complaint or negative feedback, it's just the lack of gluten). I just recently discovered that I'm gluten intolerant, and I haven't been able to work out all the tricks to achieve moist baking. Thanks for the recipe anyway. 😊
Suzi - In the Southern United States biscuits are nothing like your scones; they are flaky, buttery and soft inside (they don’t crumble) so when an American is making these correctly call them biscuits, not scones.

Sorry, was having a good memory there.......My grandmother's recipe, she was a cook in eastern Ky:-) She could sure cook:-) Even Elvis the Pelvis ate there one day, he asked to meet the cook. Someone had a camera and took a photo and got a copy of it to her.....she carried a copy of that photo the rest of her life, she was so proud of having cooked for him. She cooked for Vince Edwards too but not many people remember him I guess....lol:-) Don't get me started on her wonderful sausage gravy! That way of cooking is why so many of us are heavier than we wish we were though....sigh.....

But the problem is that we are on a low carb diet because we are going to have surgery in six months so we have to loose at least 40 lbs before surgery . You can also use a large ice cream scoop that helps you get a nice even consistency of volume and it's also really easy to get it out of the scoop you just click the little lever
Actually there is though. Almond meal is often (though not always) made with the skin in tact, from ground raw almonds, where almond flour is made from blanched almonds, skin removed. So it’s more flour like and less “mealy”. They can behave much differently in some recipes.
I tried this last night. The recipe is more of a closed texture like a scone rather than a biscuit. I believe it's the coconut flour that makes it that way. Still edible but definitely not a biscuit. I'm American, so it's not a typical biscuit texture you would find in the south
That is a Cookie cutter. Being from Kentucky, I totally get where your husband is coming from - we had biscuits and gravy for breakfast 7 days a week. Even though we lived in Louisville, my late mom was from the foothills of Eastern Kentucky (Loretta Lynn was her cousin, so yeah - "Citified" Hillbillies. LOL ) As a kid, my mom was into Healthfood, spirituality, was a die-hard Ovo-Lacto-Vegetarian, and we knew the pre-corporate GNC's very well. I can close my eyes and still smell the way they smelled. The only thing I hated was every single time she made eggs, she would put Lecithin on top of them because ... well, actually I don't know why - it was some GNC-cult thing they pushed, and we literally had cases of all this stuff at the house. But, she would still make biscuits and gravy for us since it was Ovo-Lacto-Vegetarian friendly. LOL So, when I discovered keto (and I eat it almost as a paleo diet - predominantly eggs, beef, chicken, and salads with olive oil and vinegar dressing) the one thing I missed the most was biscuits and gravy. I'm good with the biscuits, somebody posted below that it was more like cornbread, and while that is true - the texture is somewhat like cornbread, I'm willing to deal with that to have some kind of bread. So, thanks for posting your recipe, I'm going to have to try it out. I still haven't had the nerve to try to make any kind of keto gravy.
Made them and if you don't care much for the taste of almond flour then you will not like them. I can eat some keto stuff and like limiting my carb intake. However some things you just cant substitute. So it looks like good ol southern buttermilk biscuits are here to stay.

Yes, but be careful. Unless you're going full tilt keto diet, and are in ketosis, most keto recipes (not this one, but most) contain far too much fat. Most diabetics can safely consume more than twice the carbs allowed in a keto diet and still maintain healthy glucose levels, so don't be afraid to play around with recipes. This one's good as is though. Gonna be trying it myself :)
Hello,wouldn't it better to mix the egg yolks with the powders before putting the beaten egg whites because mixing them with the powders will tend to break the egg whites into snow than with a dough more moist from the yolks mixture with powders, what do you think to have them more ventilated?

You will get better results if you fold in egg whites last and 1/3 at a time.

Thanks. I grew up in the south on biscuits and gravy. I make my gravy with almond milk and I will use this biscuit recipe.

Use heavy cream instead of coconut milk in the gravy recipe for a product that closely resoumbles regular sausage gravy.
Some of us cannot consume dairy so this is an option for those that need to be dairy-free

@@BalancedWellnesswithBeth I made them today... made 4 big ones like u did...made a keto fried chicken thigh and sandwiched it between the biscuit with mayo and pickles...it was great texture. Hope I can find biscuit extract somewhere to really fool people lol

You can also use a large ice cream scoop that helps you get a nice even consistency of volume and it's also really easy to get it out of the scoop you just click the little lever

By the way almond flour and almond meal are the same thing. There is no distinguishable difference.
Actually there is though. Almond meal is often (though not always) made with the skin in tact, from ground raw almonds, where almond flour is made from blanched almonds, skin removed. So it’s more flour like and less “mealy”. They can behave much differently in some recipes.
I tried this last night. The recipe is more of a closed texture like a scone rather than a biscuit. I believe it's the coconut flour that makes it that way. Still edible but definitely not a biscuit. I'm American, so it's not a typical biscuit texture you would find in the south

That is a Cookie cutter. Being from Kentucky, I totally get where your husband is coming from - we had biscuits and gravy for breakfast 7 days a week. Even though we lived in Louisville, my late mom was from the foothills of Eastern Kentucky (Loretta Lynn was her cousin, so yeah - "Citified" Hillbillies. LOL ) As a kid, my mom was into Healthfood, spirituality, was a die-hard Ovo-Lacto-Vegetarian, and we knew the pre-corporate GNC's very well. I can close my eyes and still smell the way they smelled. The only thing I hated was every single time she made eggs, she would put Lecithin on top of them because ... well, actually I don't know why - it was some GNC-cult thing they pushed, and we literally had cases of all this stuff at the house.
But, she would still make biscuits and gravy for us since it was Ovo-Lacto-Vegetarian friendly. LOL
So, when I discovered keto (and I eat it almost as a paleo diet - predominantly eggs, beef, chicken, and salads with olive oil and vinegar dressing) the one thing I missed the most was biscuits and gravy. I'm good with the biscuits, somebody posted below that it was more like cornbread, and while that is true - the texture is somewhat like cornbread, I'm willing to deal with that to have some kind of bread.
So, thanks for posting your recipe, I'm going to have to try it out.
I still haven't had the nerve to try to make any kind of keto gravy.

Made them and if you don't care much for the taste of almond flour then you will not like them. I can eat some keto stuff and like limiting my carb intake. However some things you just cant substitute. So it looks like good ol southern buttermilk biscuits are here to stay.

I wonder if these are low-carbohydrate enough for an insulin dependent type 2 diabetic. I know we can’t eat any for of wheat flour! It’s as bad as sugar. Will try this recipe.

Yes, but be careful. Unless you're going full tilt keto diet, and are in ketosis, most keto recipes (not this one, but most) contain far too much fat. Most diabetics can safely consume more than twice the carbs allowed in a keto diet and still maintain healthy glucose levels, so don't be afraid to play around with recipes. This one's good as is though. Gonna be trying it myself :)

Hello,wouldn't it better to mix the egg yolks with the powders before putting the beaten egg whites because mixing them with the powders will tend to break the egg whites into snow than with a dough more moist from the yolks mixture with powders, what do you think to have them more ventilated?
