These stay crunchy till u don't keep them in the fridge. Even then these taste very good. Usually jalebis are with simple sugar syrup but u can experiment with other thick syrups like, may be, maple, or agave 🙂👍
There is consistency thing that I have followed in this recipe..i have kept it simple..just follow the instructions, as it is and ur syrup will come out perfect too 😀

Yes u might have to add, say 1/2 tsp for every cup...u can try without it first .if it gives issues then u can add a little, in the batter

Jalebi is something I really miss.. after being diagnosed celiac
You will love it as it tastes exactly the same as Haldiram's jalebi, if u use all purpose flour that I use or the one similar to it..

How it can b gluten free when u r adding all purpose flour? It is made of rice corn and baisun flour

Gluten is in flour. If she used almond flour , then it’s gluten free.
