I made this as a science project a million years ago...solid turning to liquid turning back to solid...it was the teacher's homework for us...lol (btw, we got extra credit for bringing in a sample for the teacher as proof...lol Great teacher he was!) I have since lost the recipe, and after digging for a long time, found it here! Thank you so much for not adding baking soda or corn syrup...am headed to the kitchen now to do a little science...lol
Hi. Really? That's interesting. How did your science project come out this time?
My daughter just gave me some roasted peanuts, and now I found a recipe to match. Thank you :)
Thank you so much for this simple recipe. I have been looking for this recipe for the whole day since we only have sugar and peanuts as of the moment. 😂😂 thank you again!
You are so welcome. Hope you enjoy.
Awesome! Gonna surprise my pregnant wife with this
Initentzd Hi. Great. Let us know if she likes it and congrats!

My fav parts are: no corn syrup, and lower heat / less stirring / less fuss than other recipes. I'm going to try. Thank you.
Great. Thanks so much and you're welcome.
Brilliant explanation. I tried with walnuts n came out well.
Thanks so much. Glad you enjoyed.
Thank you man this really helped. My Mamaw loved it and i'm gonna make some for Christmas.
Hope you enjoy! I think you will enjoy it Josh. Let us know.
Thanks for getting back, and as you describe just good old hot soapy water! No problem, works well!
Great. Glad it helped.
wow, so simple. Going to try it soon
Great. Hope you like it.
warning: be sure not to cook it for too long, it will turn bitter.
Once it turning light brown, pour peanut immediately and pour it out
it takes 5-7minute to turn brown. So it depends on the type of pot you use
Good point, May.
Mine didn't turn light brown. It stayed clear. But it was still good.
I'm gonna try this thanks
Great. Hope you enjoy.
Thank u for showing this recipe.great way n easy.i m going to try now.

Oh yum that looks fantastic and so easy.
FitAnge S Hey Angie. Yes, it really is. Are you ready for Christmas?
This is a very BASIC peanut brittle. Good peanut brittle has butter and baking soda in it.
Thanks so much. Hope you try it.
And this is exactly what I am looking for.I grew up eating this version of peanut brittle.I knew those street vendors didn't add any corn syrup or baking soda coz they're selling them cheap but yummy
YUM!
Cheryl K Thanks Cheryl.
i would recommend adding about two table spoons of butter because i had trouble with it then added the butter and it came out a lot better
Should I add some vanilla?

My dad used to make toffees the same way but he added peppermint extract to give more flaver. You should try that next time you make peanut brittle.

wasabi baby Hi. Thanks. It's really yummy. Hope you try it.
TheCooknShare Is it possible to use other kinds of nuts if i dont have peanuts?
Thanks for the video.. I am going to try this. My step mom wants coconut peanut brittle.. Just wondering how much corn syrup and vanilla would you add and when... Thank you! BTW.. Just subscribed.. You have a very calming voice.
Thanks so much. You are so welcome, and welcome to the channel.
How is it without corn syrup
that is my favorite
Hi. Great. Hope you try it.
Fun fact: while the process is very enjoyable and the final product even more so whatever cooking vessel you use will be a bitch to clean
But it’s still worth it
Yummy!! I would probably try it with sesame coz peanut gives me breakouts...😵
Candy Zhao Hi. You could probably do that. If you do, let us know how it comes out.
Help please. I have tried to make this three times. I end up with a thick white granulated mess. What am I doing wrong?
I had the same problem. You might be using a pot that's too small. I had to keep adding water when it kept turning granular until I turned the heat all the way up, but it worked out in the end.
Scratch that. I figured out a much better way. Use a 1 qt pot (with a pan Underneath if your pot is thin).
1 cup sugar
2 tbsp water
1 tsp lemon juice
Let boil and caramelize. If you're worried about the liquidy consistency spread very thin tiny test pieces on some aluminum or something to see if it hardens. Do the test pieces before caramelizes and as you go along.
Make sure you are not adding too much water. Leave the mixture, stirring regularly until you can see it turning golden brown, however long that takes. It simply isn't cooking for long enough. That can vary, depending on the pot you use.
Great video :)
TheRussianPhenom Hi. Thank you very much.
yum!
graham cosh Hey Graham. It is good. Hope all finds you well.
I tried the recipe today used granulated sugar couldnt get it to caramelise, mixture just went back to sugar, tried caster sugar got same result. What did I do wrong??
Angela Cameron Hi Angela. That's strange. Can you tell me exactly what you did?
TheCooknShare I did the exact way you said, even made sure I used Domino sugar, an hr and half goes by...it never caramelized. I totally wanted to not to have to use Carole Syrup. All that sugar is enough. Disappointed, but I'll figure something out!! Have a great Holiday!!
Yuum!!
Tasbeeh Mahmoud Hi Tasbeeh. Yeah, it's really good.
TheCooknShare can i use almonds or other nuts?
We used to call this "peanut toffee" and make it in patty cases.
Ah yes. That is so true. It is good.
I'm thinking about making some right now. You make it look so easy. I wonder if it matters what type of pot or pan you melt the sugar and water in? And when do you put the vanilla in? I'm thinking about adding bacon. So I have to factor in the bacon when do I put it in. And maybe chocolate chips how that affected.
I've always used a pot. You could use a pan, but it might be a bit wide. I would add the extract in with the peanuts. Same with the bacon. Not sure about the chocolate though. I would add it with the rest if you want to try it. Let us know how you make out as I'm curious. Hope this helps.
Thanks for the lovely recipe I really enjoyed eating them.
I have one question the recipe for me was to sticky. How can I make it so the peanut brittle is not so sticky. Thanks in advance.
Hi. You are so welcome. Yeah, it's really tricky when you are using sugar. What do you mean too sticky. You mean to work with?
😍
Can you please answer this? Will it have better/more taste if I added a dash of vanilla?
Hi. I think it would be good with a dash. Hope this helps.
Hi,
So my sugar caramelized then went solid sugar. Any ideas what I did wrong.
Eva C too hot
Add few drops of lemon juice to avoid recrystallisation of sugar
I haven't made any brittle as of yet, but was wondering on cleaning up the saucepan after making!
Is there a problem that I may come across?
Thanks
Dave.
Hi. I just boil some hot soapy water in the pot. Hope this helps.
THANKS YOU GOODNESS 🌟 YUMMY PEANUT BRITTLE ❤️🖤💚🤎 FAMILY DAPHNE COTTON ALWAYS 💜,
Hi Daphne. You are so welcome. Hope it turns out well and you enjoy.
Using shaved coconut and almond instead as peanuts is also good
Hi. Yes, that would work too. Yummy.
That's a good idea.
Not trying to drive you crazy. I'm just truly trying to help. You seem like a very nice guy, also trying to help us "candy lovers" of peanut brittle out, but at the same time, I think by accident you left one ingredient out or you totally have a certain technique that us ladies don't have. Don't forget we ladies like being precise. know every detail. Anyway, I found out on another channel that you should stir constantly and No water needed. Don't worry about the clumps of suger just throw those out and basically stir in the peanuts until well mixed. Although, she didn't add vanilla and butter. Definitely about to experiment at 4:44am, cause my family's party is today. Totally riding on God's strength now. Dealing with hospitals, shopping, last minute everything at this point. But you know, Our God is Awesome!!! He gives us strength outside our own understanding. I got this!! Ok..Hope that vital information helps us all out. Merry Christmas to anyone who reads this message. May your New Year "2017" Be a blessed one!
Sugar liquifies over heat so water is not needed. Traditional peanut brittle is made with baking soda. Unless the peanuts are salted, adding salt is an essential component in the recipe.
Nope I'm on a low salt diet so it's not essential
Would it turn out the same with brown sugar?
Actually, I think it would be okay.
Does anyone know when when peanut brittle was made in the microwave for the 1st time?
Hi Janet. That's a really good question. I'll have to look into that.
Didn't work for me, just evaporated the water and it turned back into white sugar. No caramelization going on.
Hi. I wonder what happened? I will have to think about that.
I dont have white sugar only brown sugar
heloo,how much in grams,2 cups? thank u
You can also mililitres. 1 cup is 250 mililitres.
Yeh toh Patla Chikki hai
Chikna chikki
Chikni Chikki
If u put it in the wax paper to cool, will it still work and not stick?
+chanelle okay Hi. I think that would work.
can you use coconut sugar instead? its brown already so how do I know when its ready?
Hi. I have never tried it, but you could. I would just wait for it to caramelize. Hope this helps. Let us know how you make out.
id try making it. and why it doesnt look perfect? wat must br the problem ? u can still see the sugar particle.
allen Durana probably didn't mix it enough before you boiled it
This recipe has failed me 3 times and I'm so frustrated. I can't get ANY
peanut brittle recipe to work, not just this one, so clearly it's my fault. In this recipe, the sugar never turns brown. Ever. I tried a slightly higher heat, but that doesn't help. Eventually it goes back to being crystals again and makes a mess out of my pot. What am I doing wrong?
Hi. The real important trick is that low and slow 5 minute simmer. Then give it a stir and let it simmer for an additional 5 minutes. At that point it should begin to turn brown. Also make sure you're using white granulated sugar. Let us know how it comes out. Also if you cook it too long, the sugar will go back to crystals again. I know it''s tricky.
I'm using white granulated sugar. I've tried it again, but it doesn't brown. I also tried Mark Bittman's recipe twice, and had a bit better luck. His is the same as yours, except he calls for 2 cups of sugar, medium heat. Someone just told me that stirring is what recrystalizes the sugar (which eventually re-melts, and that's how I made the Bittman recipe). Your recipe has failed me a total of 4 times. It simply NEVER turns brown. It foams and bubbles, and then turns back into crystals, and then burns. All 4 times. I also tried 2 different recipes that call for corn syrup, and water. But those were swimming pools. I'm determined to succeed, but this yours just isn't working for me at all.
Yes, it's tricky. But your intro says it's easy. It's not.
I'll have to give it a try again.
same here, I cooked it 5 times and 2 times succed
I tried this recipe (I doubled the mixture) used heavy stainless pan, on a med to low heat. Got it to the bubbling but it didn’t caramelised 😭😔
Oh no! I wonder what happened.
Me 2 lol mine went to Crystal
This is not actually peanut brittle if you can see through the brittle. That is what it's called crocante in Italy. The reason being that this is not peanut brittle is that it is missing the baking soda to make it opaque lighter in texture this is more of just to see through boiled sugar with peanuts in it , crocante. Many people may prefer this however those with Dentures need to stay away unless you take a small piece and suck on it because it's not very chewable it is like glass but much thicker. If you've never had or seen peanut brittle this is not the recipe I would use. Look for a recipe with baking soda. Then you will be making peanut brittle for those who have had crocante and prefer that which is usually made with almonds or pine nuts you can make what you wish if you've had peanut brittle before. Peanut brittle is a many many generations old recipe for Holiday times and I think everybody should learn how to make it and learn the flavor as it is so lovely! :-)
Thank you for this 😊
If it doesn't turn caramel in color, does that mean it isn't cooking long enough?
Ronesha Davis Hi.That would basically be the problem. Hope this helps.
TheCooknShare thank you
Hello. i made the same.but it turned out a bit too hard to bite. anything else i should add in to make it more soft? to eat?
( i had sugar ,,water and peanut)
Hi. You could cut back on the sugar a bit or cut back on the cooking time.
Has anyone tried to double the recipe
I’ve tried this 3 times and for some reason my sugar doesn’t ever start to brown.. it just gets really thick like cement 😢
It's really tricky. Keep the heat low to start with. Sometimes I lift it on and off the heat. Hope this helps.
@@TheCooknShare thanks for replying!
I would like to make the exact duplicate of munch candy bar brittle
Sure you can do that.
Hey i tried this recipe but the sugar was not melting i cooked for long but no use
+jawad safi Interesting. I wonder what happened.
Can wax paper work for the brittle to sit on? Will it not stick?
Hi Andrea. I think that would be fine. Hope you try it.
Thanks for the recommendation... :)
Why doesn't my sugar caramalise?
Hi. That's too bad. I'm not too sure what happened. I know it can be tricky.
Can you help me? Why my peanut burn when i put it in the sugar 😣
Hi. I think you might have the heat too high. Hope this helps.
Can I use honey instead of sugar?
Hi. I'm not too sure. It really has to caramelize. Honey might though. If you try it, let us know.
No, you can't use only honey. If you have a recipe that calls for sugar and corn syrup, you can substitute the honey for the corn syrup. Honey has to much water in it to cook down and caramelize like it's supposed to.
You're right. We tried and it didn't work. But I wonder why the peanut brittle we made was moist and didn't look good when wrapped in plastic. I think it has something to do with the duration of cooling time. Am I right gargois1? Can you help me with this TheCooknShare? Thanks in advance!
Yes, too much moisture indicates that you didn't cook it long enough. Part of the process is to evaporate as much of the moisture out as you can. Do you have a candy thermometer? if not, please get one. They are not expensive and will take so much of the guesswork out of candy making.
Thanks a lot. We will sure take note of this.
Wait did u say use corn syrup
Lillian Johnson Hi. Lillian. Yes, I did.
This turns out more like one expects on a lollipop with peanuts than a brittle. I think there is missing something, maybe butter or whatever.
superallen123 Did you make it?
If you add butter that would make it a peanut toffee. This is peanut brittle as it is brittle. Its in the name really.
This is still relevant as I'm going to make some as soon as I'm done making a poo poo
It is indeed. Hope you enjoy.
whats on baking spray ?
It's usually a form of butter.
+TheCooknShare
aw. ok .. how bout adding baking soda on it ?
+allen Durana
i'd watch other vid. about making peanut brittle and some of them are not putting water .
i couldn't get my sugar to turn color... all my water evaporated and I'm think I may have ruined my pot
Hi. Oh no. I wonder what happened. Did you use brown or white sugar and I'm just wondering what temperature you had the stove set at? In terms of the pot, I would fill it up with some soapy water and allow it to boil. Then it should scrub clean.
@@TheCooknShare i used white sugar and I had the flame a little lower than half way up bcit seemed like it was boiling faster than urs.. I'm so hurt lol
Yeah, If it starts boiling too much, I usually lower the heat. You really want a bubbling or froth. Like a bubbling foam on top. I know the pot can look really bad, but it does come off. It happens to me every time. Let us know.
I mean I'm hurt it didn't come out right I was so prepared to eat it lol.. the pot did wash right out
Oh. I'm so sorry. I would try it again with brown sugar. Start the heat on low and work your way up until you get the bubbles and go from there. Hope this helps. I know it's tricky but worth it though.
Mine went to Crystals
Not too sure what happened.
can u make soft toffee
Anyone else thinks he sounds like rob Schneider ? No offense by the way
