Is there anything else to consider concerning orthotics/orthopaedic insoles in choosing a boot? would a double boot be a problem? Obviously I should try the shoes on with the insets inside but anything else?

could I use the La sportive Olympus mons on other peaks besides everest or K2 or would it be too warm?

Warmth is subjective. Someone who is climbing and needs this level of boot has already gone through several lower tiers for smaller peaks and knows where they stand (haha) when it comes to warmth. There are plenty of places you can encounter cooler temps, and if you winter climb it's at much lower altitudes than the top peaks.
