The best way cook green bananas is in the skin if organically grown, however, for the people who is living abroad and has to buy imported bananas, I would not recommend cooking in the skin, because of chemical that they spray on them, in order to maintain their freshness. I believe this process can cause cancer...my opinion.

Roasting caramelizes vegetables so you will get a sweeter taste to the carrot and of course a slight smokeyness
