Finally decided to make the cornmeal pudding my grandma made me fall in love with. Over time I have added a few things that make it even more enjoyable to bake and eat for myself. Maybe you can do the same too until you've found your perfect cornmeal pudding.
Grandma's Cornmeal pudding | Jamaica Outdoor Cooking
INGREDIENTS
* 3cups yellow cornmeal
* 3⁄4cup all-purpose flour
* 2 cups brown sugar
* 5cups thick coconut milk
* 1⁄2teaspoon mixed spice
* 1 1⁄2teaspoons salt
* 1 1⁄2teaspoons grated nutmeg
* 1⁄2cup shredded coconut
* 1 table spoon grated ginger
* Rum (knockyourselfout)
* CUSTARD
* 1⁄2cup strong coconut milk
* 4tablespoonsgranulated sugar(heaping)
* 1dash vanilla
* 1dash mixed spice
* Rum (knockyourselfout)
DIRECTIONS
* Sift together flour and cornmeal.
* Blend all dry ingredients
* Add coconut milk. stirring until there are no lumps. Pour into a greased pan.
* Coat raisins with a little flour and sprinkle into mixture. Dot generously with butter or margarine. Bake in a moderately-hot oven 350F for 15 minutes or until set.
* Combine all ingredients for the custard, and pour it on top of the cornmeal pudding. Bake for another 30 to 45 minutes or until set. Cool and serve.

Great video! I love the natural ambiance and soothing music. I loved my mother's cornmeal puddings while growing up in Jamaica. We had it with tea or even coffee most mornings for breakfast. Even now I always have a sweet pastry or pudding with my coffee before eating a good breakfast around 2 hours later. I'm still trying to master the art of baking Jamaican puddings. Blessings my brother.

This video got me really sentimental. Thinking of how my mother grew up. She used to make cornmeal pudding with the delicious custard on top. We lived, however in England at the time, so no outdoor fire there! Delicious!

Hi Stephen, I am here in London and as I am off work for the next 3 months and thought I would do something I wanted to do for a long time so on Friday night I made sweet potato and cornmeal pudding, I thought it would take me a long time but it was pretty quick and it tasted so good and it’s nearly all gone, I will try blue drawers next, maybe even gizzarda. 😀
