I came here for the dough recipe (already have a nice meat recipe). You’re the only one that stresses the importance of keeping dough cold, and also folds/refrigerate and re-folds the dough. Result? VERY FLAKY! Well done👍🏾 BTW addng beef stick is fine because traditional recipes add a beef boullion cube

You should grow the scotch bonnet peppers. My mother lives in Florida. She sends me peppers from her plants. I store them with in a bottle with vinegar and they last for years. Great with escoviech fish too. 🇯🇲🇯🇲
Hey a fellow jamaican here. You got the crust perfectly. The closest to looking like real jamaican patties I've seen on youtube. Flaky goodness. I'd want to try some. You make me want to go to tastee (popular patty chain) to get some patties now. There are a multitude of fillings now: shrimp, lobster, soy, mega which is beef, cheese, tomato and lettuce, calallo(greens), curry chicken, jerk chicken.

Add 1Tbl Oyster Sauce and 1tsp Browning and about 1-2 tsp Soy sauce (taste the mix and adjust as needed) to darken the meat mixture and add flavor. Instead of using flour to thicken the meat filling, use bread crumbs. This will keep the meat filling moist but keep the meat filling from becoming like a paste. Cook the liquid down so it's not runny. After the meat has been completely cooked, let cool. Put the meat in small batches into a blender and pulse until the meat is ground more finely - this will only take 4-5 pulses or so. You can also put the meat in a food processor in small batches and pulse until finely ground - again, only 4-5 pulses or so. This will make the meat filling the perfect size for authentic Jamaican Beef Patties. Use an egg wash around the inside edge of the dough to help seal the edges, and then brush the top of each patty with the egg wash before cooking. You don't need to prick holes in the dough on the top of the patty, it will cook fine without it.

Hey, Lizzy Lew. This has encouraged me to make these dishes. Just made the Jerk Seasoning...loving the smell already. Scotch bonnets, are not available near me either...will find sub or call a friend who lives in NY, to ship me some...lol! Thanks for sharing, your results looks amazing. I found the Allspice berries, will grind them, I think that will make a difference in the finial dish. Love watching you and your creations...you go GIRL!
Looks fab. A couple of suggestions: if you can’t find scotch bonnet peppers, add a good measure of a scotch bonnet hot sauce (in the UK we have Encona which is my favourite brand). It really adds that depth of flavour even when I use the peppers. Secondly, rather than adding flour straight into the meat, you can mix it with a little water to make a slurry (called panade). Personally, I avoid adding flour, but I believe this is another traditional method. Lastly, I loved how you rolled out your pastry - that’s the best method! 👍🏻

I have scotch bonnet plants. I'm growing 2 currently. When they grow I can send you some dried or made into a paste or something...I live in the us and my husband is from Trinidad and has a friend who gave him a whole mature plant. I make trinidadian, jamaican and indian like meals often.

To make my ground beef "flat" I use a metal spatula and continuous chop it, If that makes sense. It always comes out as this as possible I do this when I'm trying to stretch then pack of meat

Check your ethnic food aisle for Grace brand scotch bonnet pepper sauce. Great substitute for fresh peppers.
