      What you add to onions in the pan before adding bell peppers? Chili flakes you add later. I can see in a video that you add something before adding peppers but you don’t say what it was..

      I was thinking the same, but then thought maybe it was to tone down the saltiness of the anchovies. 🤔 🤷🏽‍♀️

      Also its added to many tomato sauces and stuff. It helps to controll bitterness and to refine taste. Like adding citrus to stuff

      The sugar helps the onions and peppers get jammy faster, so if you have patience you don’t need it!

    In Australia, bell peppers are called capsicums and I LOVE them! I have them raw with other salad or cooked up with almost EVERYTHING! ❤

    when i was a kid by best friend's neighbour would always invite everyone over in the summer to help her make pepperonata!! she would fire roast and peel the peppers before making jars full of sauce 🥲 when the neighbour passed away the family was able to get alley behind the street was renamed pepperonata lane in her honour. it's a very nostalgic dish for me❤

      It looks like it may be from the brand Made In Cookware. You can find similar sized pans by searching 3 Qt sautee' pan, though how they compare functionally I wouldn't know.

    I like that you use anchovies a lot bc honestly I love cooking but think I hate anchovies even though I’ve never tasted one and I know they’re in things I already eat. Your videos give me inspiration to try making something new and different.

    Looks yummy! I don’t care for anchovies! They are too fishy tasting! Is there a certain brand that you use or am I doing something wrong?

      i’ve always wanted to cook with anchovies too but the first time i had it (from a papa john’s pizza i think LOL) it was sooo fishy and thick. i think these types in oil are meant to dissolve away and be less fishy

      Yes! It took me a while to find a brand I like which did discourage me but I was motivated at the time to make an authentic Caesar. It’s gonna be down to your own personal preference for sure but I’ve really liked dellalo and Roland if you can find it.. they’re kinda easier brand to find. It’s messy for sure and the smell will be everywhere so be careful once you open it up!
      And yes I’ve tried it on pizza and it wasn’t for me😅

    yea I make that, similar. I'll try the pepperoncini (banana peppers) addition. I eat it with bread and sausage. I keep it sweet too.

    Going to make it now, got the whole bag of bell peppers from our garden… will skip peperoncini though… planning to keep a bit in the fridge and the rest freeze in containers for later use

    Try them sautéed with chicken pieces, onions, garlic, carrots, mushrooms and celery with a sauce made of soy sauce, hoisin sauce, Worcestershire, onion and garlic powders, allspice, Chinese five spice, red pepper flakes, tarragon, salt and black pepper. Serve over hot basmati rice with cashews. Soooo yummy!

    No matter how it's used, it is just *delicious*
    It's used a lot in Mediterranean cooking as a side or a sauce. Cooked until the peper is all melted.

    I use anchovies a lot too. If I dont use anchovies I use fish sauce, which is still made of anchovies. Lol

      a lot of italian dishes and sauces contain anchovies! from reading and watching, i think they add a better depth of flavor and complexity to the dish while being a very simple ingredient

      It reminds me of like a salted duck egg or pickled plum thing I’ve seen in some Korean or other types of Asian dishes. It’s salty but also blasts some umami into dishes when done right. It’s also just preference.. not everyone will enjoy this fishy taste in their food

    I hate green bells but have a real love for orange and yellow bell peppers…of course the best are Calabrian, long hots, jalapeño, hatch, and cubanelles

    Idea, use carrot juice instead of sugar. I use it in all my tomatoe-based foods that say to add sugar... It sweetens it but adds veggies as well

    I know that feeling! Except mine is sweet potatoes. I really wish I knew how to enjoy them. But I just can’t stand their texture and taste whether they were fried or baked…
